Job Description

This role is foundational to our kitchen s success, requiring a professional who thrives in a fast-paced environment and takes pride in the "mise en place" philosophy. You will be responsible for executing high-volume prep with precision and transitioning into a high-performance dinner service that emphasizes consistency, speed, and elevated bistro-style standards.
Core ResponsibilitiesPrecision Preparation:
Execute daily prep lists with a focus on efficiency and waste reduction. Produce scratch-made components, including stocks, mother sauces, and proteins, to exact specifications.
Technical Execution:
Maintain superior knife skills to ensure uniform cuts, which are critical for both cooking consistency and plate presentation.
Line Excellence:
Operate with speed and composure during peak dinner service, ensuring every dish leaves the window according to established recipes and quality markers.
Safety & Sanitation:
Maintain a pristine workstation. Strictly adhere to all Washington State health department regulations, food safety standards (HACCP), and internal deep-cleaning schedules.
Organizational Mastery:
Manage station rotation (FIFO) and inventory labeling to ensure the highest ingredient freshness and kitchen organization.
Key RequirementsReliability:
A consistent track record of punctuality and professional accountability.
Efficiency:
Ability to manage multiple prep tasks simultaneously without compromising quality.
Stamina:
Must be able to stand for long periods and work efficiently under the physical demands of a high-volume kitchen.
Flexibility:
Must be available to work evenings, weekends, and holidays to support club events and peak dining hours.
Certifications:
Valid Food Worker Card (Food Handler s Permit) required; ServSafe certification is a plus.

QualificationsProven experience as a Prep or Line Cook in a professional, scratch-production kitchen.

Solid understanding of various cooking methods, ingredients, and equipment.

Strong communication skills and a "team-first" mentality.

Ability to follow complex recipes and maintain consistency across hundreds of covers.
