About our property:
Skamania Lodge is a Pacific Northwest resort set on 175 acres, featuring treehouses, glamping, golf, ziplining, a spa, and multiple restaurants. With over 22,000 sq. ft. of event space, it's a premier destination for retreats, conferences, and celebrations. #PGH-SKL What you will have an opportunity to do: Prepares all food items according to standard recipes and/or as specified on guest check. Visually inspects, selects and uses only food items ideal cooking, in preparation of all menu items to ensure consistency of product to the guest. Prepare a variety of food items including meats, poultry, seafood, vegetables, and cold foods. Prepares daily requisitions for supplies and food items for production. Work independently at assigned workstation to prep menu items. Store food properly in accordance with the Health Department and hotel standards. Minimize waste and maintain food cost controls. Review work status and check in with leaders before the end of shift. Checks and controls the proper storage of products, monitoring age and condition of all food items to rotate and maintain highest quality. Keeps all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations. Maintain cleanliness, sanitation, and organization of assigned work areas. What are we looking for? Strong knowledge of cooking methods, including broiling, sautéing, frying, roasting, and moist heat; emphasis on stocks, sauces, and sauté station Expert knife skills and safety Proficiency with kitchen equipment (stoves, ovens, broilers, kettles, steamers) Relevant experience in high-volume or resort kitchen environments preferred High school diploma or equivalent; culinary or apprenticeship training preferred Understanding of pantry fundamentals and cold food preparation Ability to stand for long periods and work in confined spaces and extreme temperatures. Lift and carry up to 50 lbs continuously Basic math skills for recipes, measurements, requisitions, and portioning.
