Duties Lead and coordinate all aspects of food preparation, ensuring adherence to recipes, portion sizes, and presentation standards. Supervise kitchen staff, providing training on culinary techniques, safety procedures, and efficient workflow practices. Oversee menu planning and development, incorporating dietary considerations and diverse cuisine styles such as fine dining and catering. Ensure compliance with food safety sanitizing procedures, proper food handling practices, and kitchen equipment operation. Manage high-volume production processes including grilling, braising, poaching, and other cooking methods to meet service demands. Monitor inventory levels, order supplies as needed, and maintain accurate records of food production activities. Enforce strict food safety management protocols to prevent contamination and ensure regulatory compliance at all times. Requirements Proven experience as a dietary aide or in a similar dietary department role with strong knowledge of food safety standards. Extensive culinary experience including menu planning, recipe adherence, and meal preparation across various cuisines. Skilled in operating kitchen equipment such as grills, braising pans, poaching stations, knives, and other commercial appliances. Demonstrated ability in food production for high-volume settings with excellent food handling skills. Experience with food safety sanitizing procedures, food industry regulations, and kitchen safety protocols. Strong background in restaurant or catering environments with a focus on fine dining or large-scale meal service. Knowledge of dietary requirements and ability to incorporate special diets into menu offerings. Excellent leadership skills with the ability to train and motivate kitchen staff effectively.
