Head Savory Chef About Hewn Bakery Hewn is an independent, scratch bakery committed to sourcing local, heritage grains and high-quality seasonal ingredients. We take pride in building a respectful, craft-focused kitchen culture where attention to detail and team collaboration are celebrated daily. Position Summary We are seeking a reliable, detail-oriented Savory Prep / Sandwich Maker to join our team. Reporting directly to the Head Savory Chef, this role is essential to our daily operations, focusing on the assembly of breakfast and lunch sandwiches, quiches, savory pastry components, and seasonal holiday menu items. Key Responsibilities Food Prep & Assembly Prepare and assemble daily breakfast/lunch sandwiches and quiches with consistency, precision, and speed. Execute daily savory prep tasks, including meat slicing, portioning, and scratch-making spreads, pestos, tapenades, and dressings. Assist in prepping fillings and components for savory pastries and special holiday production menus. Ensure all stations and display cases remain well-stocked throughout the day and prepped for the following shift. Quality Control & Operations Maintain rigorous standards for food quality, portion control, and presentation across all savory offerings. Assist the Head Savory Chef with tracking inventory pars and managing prep lists to minimize food waste. Adhere to operational and food cost guidelines set by the leadership team. Sanitation & Kitchen Maintenance Maintain a clean, organized, and sanitary workstation, including line areas, ovens, display cases, and walk-in coolers/freezers, in accordance with Health Department standards. Safely operate and maintain kitchen equipment in good working order. Ensure all dishes, utensils, and prep equipment are washed and stations are fully sanitized prior to the end of every shift.
Qualifications & Requirements Experience:
Prior prep cook, line cook, or sandwich assembly experience in a high-volume scratch kitchen or artisanal bakery preferred.
Skills:
Strong knife skills, basic food preparation techniques, and a solid understanding of food safety and sanitation protocols.
Work Ethic:
Punctual, proactive, and able to work efficiently both independently and within a collaborative team.
Detail-Oriented:
High standards for product consistency, cleanliness, and organization under time constraints.
Physical Demands:
Ability to stand for long periods and lift up to 50 lbs comfortably.
