Job Description
CRUST is an artisan baking company located in the heart of Fenton, MI. Voted Michigan's Best Bakery in 2018, CRUST sets the bar for high quality baking principles while using all natural ingredients. Of course, our labor of love that makes each handmade treat or loaf of bread is produced by CRUST & we couldn't do it without our people who make it all possible. We are dedicated to not only provide the best baking experience to our guests, but to our employees as well. Our employees really are the bread and butter of our business! CRUST is searching to hire ambitious individuals whose grit and determination matches that of our current staff members as they strive to produce the highest quality baked goods. Typically 8am-4pm & 9am-5pm Job Description The Bread position at Crust is one that requires attention to detail, ability to adhere to Crust's recipe guidelines, and an ability to meet tight production schedules. Because our bread team sets the bar working with high quality ingredients creating products that are second to none, it is highly important that they work cohesively with all bread teams to provide products that are in line with Crust's expectations and reputation.Responsibilities Include:
Knowing the 14 Step Bread process Familiar with the terms: Bin, Fold, Divide, and Shape Understands what doughs goes in baskets, bowls, or pans Knows how to use the scale Understands the production list Knows shaping methods Knows what doughs need seeding Abiding by quality, sanitation, and recipe specifications set forth by management Effective use of time management to ensure correct start times for all recipes Communicate with the entire bread team regularly through the preparation and bake process Understands and follows correct bake times Sets speed racks up effectively Checking bread proofs Follows the bake specifications & knows what bread goes in what oven Scoring and steaming of bread Differentiating different types of bread and completing the bake according to specifications- egg wash, flour, ect.
