Ruby's Sourdough Pizza is looking for a reliable, hands-on Morning Prep & Operations team member to support Coffee & Cream, our growing Mercato program, and the broader Ruby's operation. This is not a straight register position. The right person will be comfortable getting in early, working independently, handling food production and prep, keeping equipment and workspaces organized, and jumping into guest service when needed. We're looking for someone with a real passion for quality—someone who cares about consistency, presentation, freshness, and doing things the right way even when no one is standing over their shoulder. Because this is a shared prep space, the ability to work cleanly, efficiently, and with strong awareness of the people and production happening around you is especially important. A big part of this role is creating more depth across our team. For the right candidate, this can grow beyond morning production into cross-training for opening, closing, and shift-management responsibilities at Ruby's and other company concepts. This is a fantastic foot in the door to learn baking, BOH / prep, and management capacities within a growing local concept. What you'll do: Handle morning food production and prep Prepare breakfast, grab-and-go, charcuterie, sandwiches, and other Mercato items as the program grows Maintain high standards for quality, consistency, freshness, and presentation Follow recipes, pars, labeling, rotation, and food-safety standards Work cleanly and efficiently in a shared production space Maintain organized prep areas and leave stations ready for the next person Clean, break down, and reassemble equipment as needed Restock and help set the operation up for the next shift Support front-facing guest service when needed Learn additional Ruby's stations and operating systems Cross-train into opening, closing, and lead-level responsibilities based on experience and performance We're looking for someone who: Has a genuine passion for quality Is comfortable with early mornings Shows up on time and can be trusted to work independently Works cleanly, efficiently, and with good spatial awareness in a shared prep environment Enjoys prep, production, organization, and consistency Can move comfortably between behind-the-scenes work and guest interaction Notices what needs to be done instead of waiting to be told every step Is comfortable with thorough cleaning and equipment care Can follow written recipes, checklists, pars, and food-safety procedures Communicates well and works calmly when priorities shift Wants to learn multiple parts of the operation and potentially grow into additional responsibility Restaurant, bakery, café, deli, prep-cook, or catering experience is helpful, but reliability, attention to detail, quality standards, and willingness to learn matter just as much.

Schedule:

Early-morning availability is required. Some limited evening availability is strongly preferred, as there may be opportunities to cross-train into opening, closing, and shift-management responsibilities at Ruby's and other concepts within the company.

Pay:

Starting pay is $13 per hour Plus Tips. Tips generally add approximately $3-$4 per hour to the take home pay rate. Room for growth in the rate for the right person who can truly add that depth to the team and demonstrate reliability and passion for quality.
