Brewer's Assistant 1.

Responsibilities:

a. Responsible for execution and inspection of all steps of production from rice to bottle including: ■ Receiving ingredient shipments ■ Rice milling and polishing ■ Washing rice ■ Soaking rice ■ Steaming rice ■ Koji cultivation and inoculation ■ Moromi mash ■ Monitoring fermentation ■ Pressing ■ Filtering ■ Maturing and blending ■ Bottling ■ Shipping ■ Analyzation of product at any point in production process b. Maintain cleanliness and organization of work spaces c. Learn tasting techniques through on site resources in order to gain ability to detect acid, sugar, alcohol, etc. levels as well as distinguish flavors d. Follow and execute SOPs (standard operating procedures) e. Make suggestions for improving SOPs and work with management to implement changes f. Create cohesive, clean, and productive work environment while maintaining and improving quality standards g. Participate in team oriented working environment 2.

Qualifications and Education:

a. Highschool Diploma b. Must be able to lift 25kg (55.12lbs) to a height of 5ft (1.52m) c. Must have interest in sake production and Japanese food/culture
