Job Description
Overview We are seeking a motivated and detail-oriented Assistant Distiller to join our production team. In this hands-on role, you will support all aspects of craft spirit production, from raw material handling through fermentation, distillation, and maturation. The ideal candidate is passionate about spirits, safety-conscious, and eager to learn the art and science of distillation in a quality-driven environment. Responsibilities Assist with daily distillation operations, including mash preparation, fermentation monitoring, still runs, and spirit cutting. Perform routine equipment maintenance, cleaning, and sanitation (CIP) to maintain high standards of hygiene and prevent contamination. Monitor and record key production parameters such as temperature, gravity, and distillation proof. Support quality control efforts, including sensory evaluation, lab testing, and adherence to product specifications. Help manage inventory of raw materials, barrels, and production supplies. Follow all safety protocols, OSHA guidelines, and TTB/FDA regulations. Participate in hosting tours and tastings. Assist with bottling, labeling, and packaging runs as needed. Maintain accurate production logs and batch records. Work collaboratively with the distilling team to meet production schedules and quality goals.
