Job Description
Overview We are seeking a dedicated Garde Manger to join our vibrant local raw bar that prides itself on making everything in-house. This role offers an exciting opportunity to work with fresh, local seafood, including shucking oysters, in-house fermenting, creative cooking and engaging with guests in an open kitchen. The ideal candidate will have a passion for culinary craftsmanship, attention to detail, and an interest in expanding their skills, including learning Japanese culinary techniques. This position is perfect for someone eager to contribute to a dynamic kitchen environment focused on quality and innovation. Duties Prepare and assemble cold dishes, including seafood platters, salads, charcuterie boards, and garnishes with precision and adherence to recipes. Ensure strict recipe adherence to maintain consistency and quality across all menu items. Shuck fresh oysters and handle other seafood with care and expertise. Assist in the preparation of in-house ferments and other specialty items. Maintain cleanliness and organization of the garde manger station in accordance with health and safety standards. Collaborate with kitchen staff to ensure timely service and high-quality presentation of dishes. Support the team in learning Japanese culinary techniques as opportunities arise. Skills Proven experience or strong interest in garde manger or cold kitchen operations. Excellent knife skills and familiarity with seafood preparation, especially shucking oysters. Ability to follow detailed recipes accurately and consistently. Knowledge of food safety standards and proper sanitation practices. Strong organizational skills with an eye for detail in presentation. Willingness to learn new culinary techniques, including Japanese cuisine. Ability to work efficiently in a fast-paced environment while maintaining quality standards.
