Position:
Commis We are seeking a dedicated Commis to work alongside our chef de parties and sous chefs in executing thoughtful, precise preparation that upholds the integrity of our cuisine. This role requires a strong attention to detail, a commitment to consistency, and a passion for culinary craftsmanship. The Commis reports directly to the junior sous and sous chefs and plays a vital role in ensuring the highest standards of quality in every dish. Responsibilities include but are not limited to: Prepare foundational components for service, including assembling and baking house tarts Cut and portion garnishes with precision to ensure consistency in plating Count and organize plates and serviceware to support smooth, uninterrupted service flow Sweep and mop in between each turn of service to reset kitchen Set up and maintain the pass, ensuring dishes were staged, clean, and ready for execution Complete daily mise en place for the cold station, keeping ingredients prepped and accessible Maintain cleanliness and organization of workspace in accordance with kitchen standards Have a pulse on time management and crucial timeframes during the day Support service by anticipating needs of chefs and expediting basic prep tasks efficiently
Required Qualifications:
Minimum 2 years of professional restaurant experience; may include high volume, fine dining Open to learning West African/Senegalese ingredients and product knowledge Strong attention to detail and a passion for culinary technique Ability to thrive in a collaborative, high-energy kitchen environment Ability to follow directions and accurately execute recipes as written Ability to adapt to kitchen needs; flexible with producing pastry as well as savory items Open to learning new techniques and working with unfamiliar food items

Black close-toed shoes and professional black chef pants Hair must be pulled and pinned back No nail polish; fingernails cut and clean Equipment Bring a personal set of professional kitchen knives and maintain them in proper working condition (clean and sharpened)
