Duties Kitchen Manager:
Oversee daily back-of-house operations, manage kitchen staffing and scheduling, control food costs and inventory, uphold high quality and presentation standards, and lead, train, and motivate the culinary team. Enforce and maintain full compliance with all Ohio Department of Health regulations.
Line Cooks:
Execute menu items efficiently to recipe specifications, manage ticket times during high-volume rush periods, and master the grill, fry, and assembly stations.
Prep Cooks:
Portion ingredients, prepare sauces, chop vegetables, and ensure the line is fully stocked and set up for success before and during shifts.
Dishwashers:
Maintain the heartbeat of the kitchen by operating commercial dishwashing equipment, ensuring all plates, utensils, and cookware are sanitized and readily available, and assisting with heavy pot washing. Maintain strict adherence to food safety standards, proper food handling protocols, and sanitation guidelines at all times. Practice excellent time management to keep up with the fast-paced flow of a busy sports restaurant. Support catering, game-day specials, and banquet events by assisting with large-scale food preparation, execution, and BOH organization. Ensure kitchen safety by keeping work areas, walk-ins, and floors clean, organized, and free of hazards.
Experience & Requirements For Kitchen Manager:
Previous experience as a Kitchen Manager, BOH Supervisor, or Head Cook in a high-volume restaurant is required. Must hold a current Ohio Manager Level Food Safety Training Certification. Strong leadership, inventory management, and food cost control skills are essential. Previous restaurant or high-volume kitchen experience preferred, especially in a fast-paced environment like a sports venue or bustling pub. Knowledge of food safety standards, temperature controls, and proper food handling procedures is required for all kitchen positions. Strong time management skills and the ability to remain calm, focused, and efficient under pressure during busy game days. Ability to work cohesively as part of a team, communicating clearly with both front-of-house and back-of-house staff. Willingness to learn and cross-train across different kitchen stations; a strong work ethic and passion for food are essential. Physical stamina to stand for extended periods and safely lift kitchen inventory or equipment.
