) ______________________________________________________________________________________________ At Texas de Brazil, the Carvers (also known as gauchos) are responsible for preparing various meats, cooking various meats such as Picanha, Filet Mignon, Flank Steak, Lamb Chops, Brazilian Sausage, and much more, over an open flame, then serving the meats table-side to guests in the dining room. Pay for Gauchos/Carvers is $5.00/hr
