Job Description

Position Summary The Confectioner is responsible for producing exceptional handcrafted chocolates, confections, and specialty treats while maintaining the highest standards of quality, consistency, food safety, and presentation. This role combines technical confectionery skills with creativity and a passion for delivering memorable guest experiences. The Confectioner supports daily production, assists with seasonal offerings, and contributes to the unique storytelling and atmosphere of The Stanley Chocolate Factory. Essential Duties & Responsibilities Produce a variety of handcrafted chocolates, truffles, caramels, brittles, fudge, toffees, bark, marshmallows, and other specialty confections according to established recipes and production schedules. Temper chocolate using traditional and modern techniques to ensure superior quality and appearance. Mold, dip, decorate, package, and label products for retail sale. Prepare fillings, ganaches, caramel, nougat, and other confectionery components. Maintain strict consistency in recipes, flavor profiles, texture, and presentation. Assist in developing new seasonal flavors, limited-edition products, and holiday collections. Ensure all products meet The Stanley Chocolate Factory's quality standards before display or sale. Monitor inventory of ingredients and packaging materials and communicate ordering needs. Maintain accurate production records, recipes, and batch documentation. Follow all food safety, sanitation, HACCP, and health department regulations. Clean and sanitize production equipment and work areas throughout each shift. Minimize product waste while maximizing efficiency and yield. Assist with retail packaging, merchandising, and attractive product displays. Interact with guests during demonstrations, tastings, tours, and special events when requested. Share knowledge of chocolate-making techniques and product ingredients with guests in an engaging and professional manner. Support special events, private functions, and holiday production demands. Collaborate with the Chocolate Factory team to ensure seamless operations. Perform additional duties as assigned. Qualifications Previous experience as a confectioner, chocolatier, pastry cook, baker, or similar culinary role preferred. Knowledge of chocolate tempering, confection production, sugar cooking, and candy-making techniques. Passion for artisan chocolate and premium confections. Strong attention to detail and commitment to quality craftsmanship. Ability to work independently while maintaining production schedules. Excellent organizational and time-management skills. Basic mathematical skills for recipe scaling and inventory. Food Handler Certification (or ability to obtain within required timeframe). Culinary or pastry education is preferred but not required with relevant experience. Physical Requirements Stand and walk for extended periods. Frequently lift up to 40 pounds. Repetitive hand movements required for molding, dipping, decorating, and packaging. Ability to work in cool production environments around chocolate tempering equipment. Manual dexterity for detailed decorative work. Work Environment Commercial confectionery kitchen and retail production facility. Fast-paced environment during holidays and peak tourism seasons. Weekend, evening, and holiday availability required. Frequent interaction with guests.
