We're looking for an Itamae Jr. to m anage the preparation and technical execution of the sushi menu, supervising the work of the Sushi team, in accordance with recipe and quality manuals, to ensure the freshness and impeccable presentation of each dish. You'll be responsible for preparing high-quality sushi dishes while learning traditional Japanese culinary techniques. Their responsibilities include handling fresh ingredients, slicing fish, preparing sushi rice, assembling rolls, and maintaining cleanliness and hygiene in the kitchen. What You'll Do Manage food preparation and menu execution, adhering to quality standards and recipes to ensure the consistency of the final product. Guide and mentor the Sushi team preparation techniques, following brand standards, to serve as a technical mentor on the line. Manage ingredient stock at your station, maintaining required inventory levels to request timely replenishment and prevent waste. Verify the freshness of fish and seafood, applying expert knowledge of preservation techniques to comply with food safety protocols. Complete daily production and waste control records, according to the required formats, to ensure smooth station management. What We're Looking For Knowledge of fish and seafood (types, characteristics, and seasonality). Knowledge of Japanese and Nikkei cuisine. Knowledge of food contamination risk control and Good Handling Practices (GHP). 1-2 years or more of experience as an Itamae in Nikkei fusion restaurants. Interested?
