Kitchen Manager (AKM) to help oversee and operate all kitchen functions including preparation, production, plating, safety, sanitation, and cleanliness. The Asst. Kitchen Manager must have verifiable and proven skills working in a fast pace environment all while assuring food quality is maintained at a high standard. Duties and Responsibilities Ensure all food is consistently prepared according to the Twelve25 recipes Recruiting, interview, evaluate, hire, discipline and terminate kitchen employees Enforce rules, implement policies and procedures Oversee training of new kitchen employees Fill in where needed to ensure guest service standards and efficient operations Prepare all required paperwork schedules in an organized and timely manner Conduct weekly Inventory Ensure equipment is clean and kept in excellent working Submit the proper paperwork to Twelve25 for permission to test new menu items Ensure all products are ordered according to predetermined product specifications Responsible for receiving correct product amounts in excellent condition Maintain food cost according to Twelve25 benchmarks Schedule labor by anticipating customer volume Be knowledgeable of restaurant policies regarding personnel Administer corrective action for Twelve25 standard operating procedure violations Oversee the training of kitchen personnel Ensure kitchen staff understand and are able to operate kitchen equipment Responsible for kitchen floors, mats, walls, hoods, and equipment cleanliness Check and maintain proper food holding and refrigeration temperature Requirements and Qualifications Must be over 21 years of age A minimum of 5 years of experience in varied kitchen positions At least 3 years BOH experience in a high volume similar capacity Be able to lift items weighing up to 50 pounds Must have a basic knowledge of dining room and service procedures and functions Be able to work in a standing position for long periods of time (up to 10 hours) Be able to walk and be "on your feet" for long periods of time (up to 10 hours) Extensive knowledge of food safety concepts and practices. Serve Safe certification required
