Job Description
PLOMO Quesadillas is Fayettevilles' hottest late night eatery! We offer notoriously delicious quesadillas and eclectic sides that are made from the freshest ingredients in our scratch kitchen. Our menu features specialty and classic quesadillas as well as unique monthly drops. Overall Duties Oversees the development, management and operation of PLOMO and provides strategic direction to accomplish our company's mission and values, increase revenue and profitability, and enhance the overall guest experience. Principal Responsibilities (Essential Functions) Culinary Leadership
- Undertake overall supervision of the PLOMO kitchen, catering operations, and prep schedule. Financial Management
- Develop budgets and sales goals for kitchen operations. monitor expenses, specifically food and labor costs, and revenues; report and adjust as appropriate. Collaboration
- Collaborate with other key team members to boost the overall guest experience as it relates to management services via menu development, customer service, special events, and restaurant operations. Staffing
- Directly supervise a highly effective kitchen staff. Develop and maintain hiring, training, and disciplinary processes and programs. Oversee scheduling of kitchen staff. With guidance from the General Manager develop kitchen training manuals and SOP's to ensure proper staff communication at all times. Kitchen Responsibilities Kitchen Safety
- Ensure safe work environment for all kitchen staff as well as all restaurant patrons. Kitchen Management
- Oversee the overall management of kitchen inventories (selection, development, purchase, receipt, storage, shipping, quality control, display, obsolescence, etc.). Oversee weekly/ month end physical inventory process; develop procedures for such. Kitchen Standards and Practices
- Develop protocols, checklists, and standards to ensure high quality of food at all levels of the production process. Kitchen Training
- Oversee kitchen and food service training programs to ensure high standards of quality. Coaching, counseling, and proper communication. Purchasing and Receiving
- Develop and oversee procedures related to the purchasing, receiving and movement of food and beverage raw products and ingredients. Requisitioning and purchasing of all raw products based on understanding patron consumption and eating trends. Fiscal Responsibility
- Develop and maintain financial tracking and reporting systems for effective inventory management and cost control and profitable operations. Also estimate food consumption. Food Waste Accountability
- Develop and implement procedures to minimize food waste and shrinkage. Equipment Maintenance
- Ensure that kitchen equipment is properly maintained and cleaning logs are maintained. Cleanliness Accountability
- Develop proper procedures for ensuring proper sanitation, cleanliness, and exceed health requirements as determined by local, state, and national governing bodies.
Minimum Qualifications Education, Training, and Traits:
Must be familiar and comfortable working with computer applications including the Microsoft Office suite of programs as well as standard POS and payroll processing systems. Strong background in food service management including implementation of effective inventory and cost analysis programs. Ability to read, analyze, and interpret common technical publications, financial reports, and legal documents. Ability to work with basic mathematical concepts such as fractions, percentages, ratios, probability, and proportions. Creative skills in areas such as food presentation, menu development, and writing. Good communication skills including internal and external presentations as well as general guest relations. Strong ability to speak before large public audiences.Work Experience:
Minimum of 4 years related experience and/or training in the restaurant field with at least 2 years management experiencePhysical Demands and Work Environment:

In the work environment described below, position requires working in a high functioning kitchen for prolonged periods of time and good eye/hand coordination, bending and stretching for prepping, and physical stamina to lift a minimum of 25 pounds. Visual acuity to review written materials is required for this job. Additionally, this position requires meeting the public and the organization in a professional and courteous manner. Occasionally, while performing the duties of this job, the employee is required to independently travel in the local area.Work Environment:
Work will be performed in a restaurant environment, outdoor spaces, and in communities served. The physical arrangement of the Restaurant may require the position to work in an open environment within close proximity to other colleagues. Work space must be organized and reflect efficiency. Frequent evening and weekend work hours and some local travel are required.Compensation:
