Senior Food & Beverage Director SummaryHires, trains and directs the banquet staff in servicing all banquet activities in order to ensure a successful function and repeat business. Attends weekly meetings including pre-convention meeting, BEO meeting, Menu tasting and daily supervisor meetings. As a member of Talking Stick Resort, he/she will work closely with all clients to ensure that all details of their event run as smooth as planned. Supervisory ResponsibilitiesDirectly manages the Assistant Banquet Manager who supervises employees in the Banquet Department of Talking Stick Resort. Responsible for the overall direction, coordination, and evaluation of Banquet and Showroom staff. Carries out management responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Pathways to Success is designed to foster the participant's preparedness for success on the job. A Manager level leader is expected to actively support ECMs in their professional and academic goals through:
Program Awareness and Communication:
Maintain up-to-date knowledge of the Pathways to Success programs. Ensure all ECMs are informed about relevant opportunities.
Mentorship and Coaching:
Actively mentor ECMs, offering guidance on career pathways and facilitating connections to additional coaching resources as needed.
Resource Allocation:
Allocate time and budget to support ECMs' participation in developmental activities, such as courses, certifications, or conferences.
Development Planning:
Collaborate with ECMs to create and regularly review individual development plans, setting measurable goals and tracking progress.
Barrier Removal:
Identify and address obstacles that may hinder ECMs' career growth, advocating for their needs within the organization. Essential Duties and Responsibilities include the following. Other duties may be assigned. Hires, schedules, and trains all banquet staff to include conducting roll call and monthly meetings, and illustrating the proper techniques and etiquette for American, French, and buffet and parade types of service.

Monitor staff performance. Defines performance requirements and develops action plans for achievement of goals to communicate expectations and counseling when neededEnsures excellent customer service for every guest, every time.

Works closely with Assistant Banquet Manager to create weekly schedule as well as updates or revises schedules daily if needed.

Acts immediately on all customer comments to ensure that corrections are made.

Performs assigned input work in compiling annual budgets.

Prepares and coordinates the periodical performance reviews of personnel.

Maintains all staff records - UKG, Food Handlers cards, Alcohol Awareness trainingHires and trains Tribal Members consistent with the casino's Community and Indian Preference guidelines.

Ensures proper billing and charges to guests for their events, prepares charges for guest to review at the end of the event; collects payment if necessarySupervises the set up of function rooms to include placement of tables, audio / visual items, linens, silver, china, and glassware according to event order specificationsVisually inspects function rooms and equipment prior to functions for cleanliness, proper inventory, and set up.

Verbally communicates, in a calm, positive demeanor, during the course of the function with the kitchen, service, beverage, conventions services, and engineering staffs, as well as the guest host to ensure timely execution of events, quality service, and adherence to all applicable federal, state, local safety and health regulations and corporate standards.

Supervises clean-up of function room and proper breakdown and storage of equipment.

Attends meetings such as BEO meeting and pre-convention meetings.

Orders supplies and linens for functions from Purchasing and Housekeeping departmentsSeparates, posts, and distributes event order sheets.

Assist servers and captains with the execution of events according to the event order and Talking Stick Resort quality standards.

Responsible for maintaining up-to-date knowledge of Credit Card Compliance requirements commonly known as PCI (Payment Card Industry) Compliance by attending training provided by Talking Stick Resort, at least once a year or more if required by management. Signature verification of course attendance will be required.

Responsible for the enforcement of PCI (Payment Card Industry) Compliance regulations to protect card holder data and adhere to the standards to protect the guests' private card information. This includes, but is not limited to, observing and reporting inappropriate card handling activity, of either customers or by employees, as defined by PCI.Responsible for the enforcement of all applicable regulations, under the code of Federal Regulations, Title 31, Chapter X, as it pertains to this position. This includes, but is not limited to, observing and reporting suspicious activity, of either customers or employees, as defined in the Code of Federal Regulations.

Responsible for maintaining up-to-date knowledge of all applicable regulations under the Code of Federal Regulations, Title 31, Chapter X, by attending Title 31/Anti-Money Laundering training, provided by Talking Stick Resort, at least once a year or more if required by management and outlined in the Title 31 Minimum Internal Controls. Education and/or
Experience:
High School Diploma or GED required. College degree in Hospitality Management preferred. Prior supervisory/management experience in the Food & Beverage industry with at least 5 years as an Assistant Banquet Manager or higher position within a banquet environment is required, preferably in a high volume hotel or resort required; and/or an equivalent combination of education, experience or training
Certificates, Licenses, Registrations:
Must possess a Maricopa County Food Handlers Card.

Knowledge of Arizona State Liquor Laws - Title 4 and/or Arizona Alcohol Awareness certification required.
Computer Skills:
To perform this job successfully, an individual should have excellent PC skills and broad knowledge of current and standard software applications and hotel systems (Infogenesis/Agilysys (POS), Microsoft Office, Delphi, Amadeus, Visual One, etc.). Must be highly proficient with Microsoft Excel and knowledgeable on pivot tables.
Other Qualifications:
Must have comprehensive knowledge of food and beverage preparations, service standards, guest relations and etiquette Must be reliable, trustworthy and posses a pleasant personality.

Knowledge of the appropriate table settings and service ware.

Should have previous working experience of all Banquet department positions.

Ability to diagram/plan event to scale.

Knowledge of all applicable federal, state and local health and safety regulations.

Ability to set realistic goals and standardsMust have excellent customer service and communication skills.

Ability to work harmoniously with others and be a team player.

Ability to handle pressure and difficult situations.

Presents a professional and well-groomed appearance at all times.

Must be able and willing to work a flexible schedule, including weekends, evenings and holidays.• Must possess shipping and receiving knowledge. Language SkillsMust be able to read, write, speak and understand English. Knowledge of multiple languages is a plus. Physical DemandsWhile performing the duties of this Job, the employee is regularly required to stand for prolonged periods of time; walk; use hands and fingers to handle, or feel; reach with hands and arms and talk or hear. The employee must regularly lift and /or move up to 75 pounds. Ability to move or push goods on a hand cart/truck weighing a maximum of 200 lbs. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
Work Environment:
While performing the duties of this job, the employee is regularly exposed to secondary smoke. The noise level in the work environment is usually moderate to loud. Will be required to work outdoors in uncomfortable weather conditions.
