About Us L.A. Italian Kitchen is an Italian quick serve restaurant located in the Morongo Casino. Our specialty pizzas, pastas and other specialties are from our Italian Family time proven recipes from over 70 years. . This is a hands-on Store Manager position . We are not looking for a manager who only supervises from the sidelines. The right person will be on the floor, working with the team, making food, managing service, solving customer issues, training employees, and making sure the restaurant operates correctly every shift. We are looking for a strong restaurant leader with real experience in pizza, dough handling, Italian food, kitchen operations, and guest service . Position Summary The Store Manager is responsible for the daily operation of the restaurant, including food quality, dough and pizza execution, labor control, customer service, cleanliness, training, cash handling, inventory, and team leadership. This person must be able to lead by example and work directly in the operation during busy periods. The position requires strong communication skills, organization, follow-through, and the ability to hold employees accountable while maintaining a positive work environment. Key Responsibilities Food, Pizza & Dough Operations The Store Manager must be comfortable managing and participating in food production, including: Pizza preparation, stretching, topping, baking, and quality control Dough handling, dough management, proofing, refrigeration, and production planning Pasta and Italian food preparation standards Portion control, recipe compliance, and food presentation Managing food freshness, holding times, waste, and product rotation Maintaining consistency during high-volume mall traffic periods Ensuring all food is served hot, fresh, and according to company standards Prior experience with pizza dough, fermentation, or scratch/prepared dough systems is strongly preferred. Hands-On Leadership This is a working manager role. The Store Manager is expected to: Work shoulder-to-shoulder with the team during rush periods Cook, prep, serve guests, expedite orders, and assist wherever needed Lead by example in speed, accuracy, cleanliness, and customer service Train employees on food preparation, service, safety, and company standards Hold team members accountable in a fair, professional, and legally compliant manner Maintain a positive, respectful, and productive work environment Guest Service The Store Manager must ensure strong service standards, including: Greeting and assisting guests professionally Handling customer concerns quickly and respectfully Maintaining fast, accurate service during busy periods Supporting strong online reviews and guest satisfaction Making sure the team communicates clearly with customers and each other Because the Outlets at Orange serves a diverse customer base, strong communication skills are important. Bilingual ability, including Spanish or other languages, is helpful but not required. Labor, Scheduling & Store Controls The Store Manager will be responsible for: Managing labor costs and staffing levels Building and adjusting schedules based on business needs Reducing overtime where possible while maintaining proper coverage Monitoring sales trends and peak traffic periods Managing cash handling, deposits, drawers, and register procedures Controlling waste, food cost, and product usage Ordering, inventory, receiving, and vendor coordination Maintaining accurate records and completing required management tasks on time Cleanliness, Safety & Compliance The Store Manager must maintain high standards for: Food safety Cleanliness and sanitation Health department readiness Employee hygiene and uniform standards Safe equipment operation Proper food storage, labeling, and rotation Opening and closing procedures Company policies and applicable federal, state, and local employment laws Food handler, food safety, or manager-level certification may be required after hire depending on company policy and applicable law. Candidates are not required to already have these credentials to apply, but they must be willing and able to obtain required certifications within the required timeframe.
Qualifications Qualified candidates should have:
