West Hollywood, CA TENSHOU Collection brings Japan's distinguished fine-dining traditions to the U.S. through specialized concepts developed with award-winning restaurant partners in Japan. Each preserves its unique culinary philosophy, craftsmanship, counter service style, and identity. Launching in Las Vegas in 2026, followed by West Hollywood and New York, TENSHOU is building a platform that brings exceptional Japanese restaurants to the U.S. without compromising what makes them distinctive. The environment is intimate, highly personalized, and detail-driven, with much of the guest experience taking place in counter-seat settings where chefs, service staff, and guests interact closely throughout the meal. In keeping with the authenticity of traditional Japanese hospitality and the spirit of omotenashi, this is a non-tipped position . TENSHOU Collection is committed to providing an exceptional dining experience rooted in Japanese culture, where genuine hospitality and attentive service are offered without the expectation of gratuities. Overview You'll own one kameiten (restaurant concept) from top to bottom — its team, its numbers, its standards, and its readiness for inspection on any given day. This is an operator role, not a supervisor role: you set the pace, develop your people, protect the guest experience, and answer for the results. What You'll Do Own the full operation of your concept — service, food and beverage quality, cleanliness, labor, and cost of goods Hit budgeted sales, labor, and COGS targets; bring solutions, not just explanations, to variances Run daily operations: prep levels, ordering, inventory, vendor receiving, opening/closing, and cash handling Recruit, onboard, schedule, and develop your team; run a pre-shift briefing before every service Deliver hands-on coaching, hold performance conversations, and enforce California meal/rest break compliance in real time Own guest recovery and uphold TENSHOU hospitality standards on every shift Serve as your concept's point of contact for health, ABC, fire, and other inspections — greet inspectors, accompany them, and manage corrective actions through to closure Maintain daily inspection readiness: current permits, complete logs, and posted labor notices Lead regular self-audits and fix issues before an inspector finds them Other tasks as assigned What You'll Need 3+ years of restaurant management experience; ownership of a single concept or unit P&L preferred Hands-on experience hosting health/ABC/fire inspections and managing corrective actions Working knowledge of California food safety, alcohol service, and wage-and-hour law Proven ability to hire, schedule, coach, and lead a team of 10+ Comfortable with POS, scheduling, and inventory systems; able to build and read a weekly P&L Japanese language ability is a plus Strong interest and/or experience in Japanese culture, cuisine, and hospitality is highly desirable. Candidates should have an appreciation for omotenashi and an interest in understanding the philosophy behind Japanese service rather than serving Japanese food in a conventional Western fine dining setting Certifications & Requirements State Food Handler Card (required at hire) RBS (Responsible Beverage Service) certification or equivalent Must be authorized to work in the United States Schedule & Physical Requirements Full-time, salaried; evening, weekend, and holiday availability required Reachable outside scheduled hours for concept emergencies and unannounced inspections Able to stand/move for full 8-10 hour shifts and lift up to 40 lbs
