Assistant Manager/Head Chef :
This position requires a hands-on leader who can motivate, direct and lead a staff of associates to success. You must have excellent communication skills for both internal and external customers. Must have high sanitation standards and practices, HACCP experience, and a culinary passion. This is a working manager's position, which means you will be working daily with the line level staff.
Position Summary:
The Assistant Manager/Head Chef is responsible for the preparation, service and delivery of meals for all accounts. The Assistant Manager/Head Chef is charged with supervising the culinary services operation.
Qualifications:
Must have at least three years of culinary experience, catering, quantity food production, a basic knowledge of modified diets, some prior food service supervisory experience and be ServSafe certified. You must have 4 years of management or supervisory experience. Knowledge of the National School Lunch program (NSLP), SFSP, CACFP preferred, but not necessary. If no ServSafe certification, we will provide training and testing at no cost to you within 45 days of employment and maintain certification.
Responsibilities:
Opens kitchen and ensures that all equipment is working. Prepares foods according to the menu cycle, standardized recipes and directions provided by the Kitchen Manager and Consulting Dietitian. Documents refrigeration and food temperatures and completes necessary paperwork documentation. Maintains kitchen equipment in a clean and sanitary manner. Reports any equipment needs or issues to Kitchen Manager. Presents food in an appealing manner according to the Food Presentation Policy. Directs kitchen staff to ensure that all quality, quantity and timing objectives are met. Follows posted Sanitation Schedule and ensures a clean and organized work area at all times. Complete weekly inventory and financial paperwork. Orders all food and supplies for the unit. Ensures that all route deliveries are completed in a timely manner. Must complete and participate in Food Works company trainings, In-Services and Safety training programs and any/all
USDA/DOE
required trainings.
Competencies:
Knowledge of basic modified diets.
NSLP, SFSP, CACFP
guidelines preferred, but not necessary. Knowledge of basic food service sanitation and proper food handling. Ability to use industrial equipment and knowledge of basic equipment maintenance. Ability to "batch" cook for large quantity food production. Effective oral communications with management, employees, students, and staff. Ability to read menus and recipes. Ability to use proper judgement and to maintain confidential information. Ability to react calmly and effectively in emergency situations. Ability to accept direction and adhere to operating, company and safety policies and procedures. Ability to stand up 8 hours at a time. Ability to lift and push/pull up to 40 pounds. Understanding of MSDS and ability to properly use and maintain chemicals. Ability to work within deadlines. Ability to lead and supervise the nutrition services staff as necessary. All candidates must submit to a State, FBI Criminal Background Check, Child Abuse Clearance, Drug Testing, and DMV background check.
