This role combines hands-on food preparation, kitchen leadership, staff supervision, and operational management to ensure residents receive high-quality meals and excellent service in a safe, efficient, and welcoming environment. The Chef / Assistant Manager works closely with the Dining Services Director and management team to maintain food quality, regulatory compliance, and resident satisfaction. Essential Duties and Responsibilities Culinary Operations Prepare and cook meals according to established menus, recipes, and dietary requirements. Ensure food is prepared, portioned, and presented with consistency and quality. Assist in menu planning, including seasonal offerings and resident favorites. Monitor food quality, freshness, and proper storage. Ensure compliance with all sanitation, food safety, and infection control standards. Kitchen Management Supervise kitchen staff and assist with scheduling to maintain proper coverage. Train and mentor cooks, servers, and dishwashers on kitchen procedures and food safety standards. Maintain inventory of food, supplies, and kitchen equipment. Assist with ordering and receiving food deliveries. Monitor food costs, waste, and portion control to support budget goals. Dining Services Leadership Assist in overseeing front and back of house operations. Step into management role in absence of Dining Services Director. Help coordinate special events, holiday meals, and catering functions for residents and guests. Address resident concerns and special meal requests professionally. Maintain strong communication with residents and staff to improve dining satisfaction. Regulatory Compliance Ensure compliance with Illinois Department of Public Health (IDPH), local health department regulations, and company policies. Maintain safe food handling procedures, temperature logs, and kitchen sanitation. Enforce workplace safety standards and proper equipment use. Staff Accountability Assist with employee coaching, performance evaluations, and disciplinary action when necessary. Promote teamwork, professionalism, and a positive work environment. Lead by example with attendance, work ethic, and customer service. Qualifications Previous experience as a chef, lead cook, or kitchen manager preferred. Supervisory or management experience in food service required. Experience in senior living, healthcare, or hospitality preferred. Knowledge of dietary restrictions, modified diets, and texture-modified meals preferred. ServSafe Certification (or ability to obtain). Strong organizational and leadership skills. Ability to work flexible hours including weekends and holidays. Ability to lift up to 50 pounds and stand for extended periods.
