Okonori is an elite 16-course Japanese fine dining omakase counter in Carmel, Indiana. Operating at a premium $168+ per person tier, we source our seasonal ingredients directly from Japan to deliver an uncompromised luxury culinary experience.
We are seeking an experienced, career-minded Fine Dining Restaurant Manager to lead our front-of-house operations alongside our executive team. This role requires an individual with an impeccable professional presence, a deep understanding of luxury service mechanics, and an unshakeable commitment to workplace boundaries and operational discipline. Casual restaurant habits do not fit our model.
Key Responsibilities:
Maintain hyper-strict aesthetic, cleanliness, and service standards across the dining room and counter. Orchestrate flawless floor pacing, coordinating seamlessly with the culinary team. Requirements (Dealbreakers): 3+ years of Management experience in fine dining, a Michelin-rated establishment, an upscale steakhouse, or a luxury hotel environment. Deep knowledge of high-end sake, wine pairings, and premium Japanese spirits. Impeccable professional boundaries, leadership presence, and communication skills. Manage, train, and hold front-of-house staff accountable to luxury service protocols (discreet table maintenance, precise glass placement, and open-hand service). Cultivate elite guest relations, recognizing regulars and seamlessly managing VIP profiles with absolute discretion. Oversee front-of-house labor metrics, scheduling, and premium beverage inventory controls.
