The Assistant Kitchen Manager works in direct support of the Kitchen Manager. Their duties include assisting the Kitchen Manager in performing quality control on food leaving the kitchen and keeping up with demand. Responsible for cleanliness of the kitchen and other duties. While Assistant Kitchen Managers are responsible for a variety of tasks, common duties include: Operations & Leadership Supervise BOH operations during assigned shifts to ensure efficiency and quality. Lead by example, setting the pace for cleanliness, prep, and service execution. Support the Kitchen Manager and GM in daily operations, prep lists, and service organization. Manage inventory, ordering, and receiving to control costs and prevent waste. Maintain compliance with all health, safety, and sanitation regulations. Team Management Train and mentor line cooks, prep cooks, dishwashers, and support staff. Assist with creating schedules and ensuring appropriate labor coverage. Promote a positive kitchen culture built on teamwork, accountability, and respect. Communicate effectively between the kitchen and management teams. Quality & Consistency Ensure all menu items meet Baggerstown's recipes, plating, and presentation standards. Conduct regular line checks and temperature logs. Monitor portion control and adherence to recipes to protect food cost and consistency. Administrative & Financial Assist in weekly inventory and cost tracking (food, labor, waste). Work with the Kitchen Manager and GM to input invoices and track COGS through R365. Help manage kitchen maintenance schedules and vendor communication. Competencies A strong base of culinary knowledge Leadership skills Interpersonal skills Conflict resolution Attention to detail Financial understanding Physical stamina to withstand a full shift potentially on their feet Must be able to carry & lift up to 50 lbs Physical Requirements Ability to stand for extended periods and lift up to 50 lbs. Comfortable working in a fast-paced, high-volume environment.

Schedule:
Flexible schedule — nights, weekends, and holidays required. May vary based on location needs
Experience:
2+ years of kitchen leadership experience (Sous Chef, Lead Cook, or AKM role preferred). Strong understanding of food safety, sanitation, and health department compliance. Experience with volume cooking and prep management. Knowledge of inventory systems (R365 experience a plus). Ability to lead, motivate, and develop a diverse culinary team. Excellent communication and time management skills. Passion for scratch-made food and creating memorable guest experiences.
Degree/ License/Certification:
HS Diploma or equivalent Must be able to pass a background check Serve safe certified or equivalent
