Assistant Food Service Manager is a working leader and responsible in assisting the Project Manager with operating the dining facility with daily administrative duties, food preparation and kitchen sanitation.
Qualifications and Skills Assistant Food Service Manager Qualifications:
Within the past 10 years, five years general experience in large volume food preparation and service. Three years' experience in preparing cafeteria style, multi-entrée menu meals (Breakfast, Lunch, Dinner) that includes preparation of soups, salads, gravies, sauces, vegetables, meat, fish, poultry, breads, deserts, pastry, and all other foods constituting a full meal. •Recent, one-year experience in a supervisory or lead position that included planning, scheduling, and directing personnel in food preparation and service. Knowledge of progressive cooking techniques and food preparation quality standards. A high school graduate or GED, and the ability to effectively communicate both orally and written. •Possession of a culinary degree from an accredited institution waives this requirement. Assistant Food Service Manager Requirements :
Must be able to pass a criminal background check!!! The ability to frequently move objects weighing up to 40 pounds unassisted, and occasionally lift or move objects weighing over 40 pounds with assistance. The ability to work continually standing and walking, and frequent stooping, reaching, pushing, pulling, and bending. Responsible for assignment and monitoring of all cooks on their shift and any meal preparation personnel, to include personal hygiene compliance. Monitor subsistence availability; coordinate with ration personnel and pull all required ingredients from storerooms, maintaining proper accountability and time and temperature controls. Coordinate with management for any menu changes, additions, or substitutions. Maintain proper temperature of all foods during holding, transport, reheating, and serving to assure quality control and food safety. Responsible for the monitoring and recording of all food temperatures in accordance with applicable Risk Management procedures. Coordinate the serving line layout, to include pan sizes, garnishes, utensil requirements, proper portion sizes, line replenishment procedures, and the assignment and role of the line-service personnel. Monitor personnel to ensure they clean and maintain all equipment and work areas practicing a "clean as you go" concept. At the end of each shift check to ensure work areas have been properly cleaned and organized. Control food production and progressive cooking through good communication, sound decision making and supervision and training of personnel Read and become familiar with the Performance Work Statements in the contract, and all applicable food service regulations and technical bulletins. Assign personnel, utilizing Production Schedules and other verbal or written communication in order to accomplish the food service mission or instructions of management. Lead by example with on-time performance, clean uniform and a professional appearance and demeanor. Ensure all employees are inspected for uniform and personal appearance prior to commencing work. Report deficiencies to Project Manager. Coordinate tasks with Project Manager; discuss meal and subsistence status along with any deficiencies noted and their corrective actions. As necessary assist the Cooks and Mess Attendants in the facility with the preparation of products. Identify training needs, coordinate for training, and conduct minor training as needed. In the absence of the Project Manager, and when instructed too, act on their behalf and make sound decisions in accordance with contract and company policy. Job Type:
