Job Description

Desert Cow BBQ & Taproom is coming to Richmond, Texas, and we're looking for a hands-on Kitchen Manager to help build and lead our kitchen from day one. We're creating a Texas BBQ restaurant and taproom centered around smoked meats, big portions, cold drinks and a family-friendly sports atmosphere. Our menu will feature items including smoked brisket, pulled pork, ribs, sausage, smoked wings, loaded baked potatoes, tacos, appetizers and house-style sides. We're looking for a Kitchen Manager who can do more than stand in the office. You should be comfortable leading from the kitchen and cooking alongside your team when necessary. What You'll Do Lead daily BOH operations Help recruit and train the opening kitchen team Establish prep procedures and opening/closing routines Manage BBQ production and daily pars Maintain consistency, portion control and presentation Manage food inventory and ordering Monitor food cost and waste Maintain proper receiving and storage procedures Build and maintain prep lists Manage kitchen scheduling and labor Maintain health-department and food-safety standards Ensure proper cooking, cooling, holding and reheating procedures Maintain kitchen cleanliness and equipment Coordinate closely with the GM and Assistant General Manager Lead the kitchen during high-volume service Help improve kitchen systems as Desert Cow grows What We're Looking For We'd like someone with restaurant kitchen leadership experience, preferably in BBQ, high-volume casual dining, scratch cooking or a similar operation. BBQ/smoker experience is a major plus, but leadership, consistency, organization and food-safety knowledge are equally important. You should understand the relationship between: Food quality + portion control + waste + labor + ticket times = a successful kitchen. A Certified Food Manager certification will be required. Night, weekend and holiday availability will be necessary. Compensation $50,000-$55,000 annually, depending on experience. Full-time salaried management position. Why Join Desert Cow? You'll have the opportunity to help establish the kitchen rather than inherit someone else's operation. We want a Kitchen Manager who can eventually say: "I helped build this kitchen." As Desert Cow grows, we want our original leadership team to have opportunities to grow with it.
