Job Description

Restaurant Information:
Carmel transports the energy, culture, and flavor of the renowned outdoor marketplace "Shuk HaCarmel" to Melrose Avenue, in the heart of LA's food scene. Using some of the oldest techniques in the world— a wood-burning oven, an open flame grill— chef Asaf Maoz interprets ancient Levantine cooking traditions through a modern lens. Carmel is evolving from a successful launch into a lasting presence on Melrose. We believe great restaurants are built by leaders who are present, decisive, and deeply invested in both people and guests.
The Role:
You are an experienced, hospitality-first leader who understands that great guest experiences start with empowered teams. You lead with presence, clarity, and consistency, and you take ownership of outcomes.
Hospitality & Guest Experience:
  • Lead by example on the floor and set the tone for hospitality across all services
  • Build relationships with regulars and VIP guests
  • Ensure service standards are consistent, warm, and intentional
  • Coach staff in real time to elevate guest experience
Team Leadership:
  • Hire, train, and retain hospitality-driven team members
  • Build a culture of accountability, pride, and professionalism
  • Develop managers and future leaders through hands-on coaching
  • Lead ongoing service and wine education
Financial Oversight:
  • Manage labor planning with a focus on efficiency and sustainability
  • Monitor food and beverage costs and address variances
  • Manage waste and consumable goods
Safety & Standards:
  • Maintain a respectful, compliant, and safe workplace
  • Ensure adherence to health, sanitation, and responsible alcohol service standards
  • Physically inspect the building daily, monitoring for condition & cleanliness
Qualifications:
  • 4 + years in full-service, high-volume or quality-driven restaurants
  • Proven ability to lead teams of 50+
  • Experience in chef-driven or fine dining concepts preferred ⸻
