Must have hands-on experience operating smokers, monitoring temperatures, maintaining food quality, minimizing waste, and following food safety standards. Reliable, organized, and able to work in a fast-paced environment. Monday-Friday, 9 AM-6 PM. Pay based on experience. Duties Manage all aspects of the pit-smoking process, including preparation, cooking, seasoning, and presentation of smoked meats and dishes Supervise and train kitchen staff on proper smoking techniques, safety protocols, and casino food handling standards Oversee daily kitchen operations, ensuring adherence to casino industry regulations and quality standards Maintain accurate inventory levels of ingredients, supplies, and smoking equipment using Microsoft Office tools for record-keeping and reporting Ensure compliance with casino operations regulatory requirements related to food safety, cash handling, and guest service standards Monitor guest feedback and adjust recipes or procedures to enhance customer satisfaction and repeat business Lead conflict management efforts within the team to foster a positive work environment focused on teamwork and excellence
