In person Position Overview The PM Kitchen Supervisor is responsible for overseeing evening kitchen operations, ensuring high-quality food preparation, maintaining sanitation standards, and supporting the culinary team during dinner service and late-evening operations. This role provides leadership, hands-on support, and ensures all kitchen activities align with Hilton brand standards and guest satisfaction goals. Essential Job Functions Kitchen Operations & Food Quality Supervise all evening kitchen staff, ensuring proper food preparation, cooking, portioning, and plate presentation. Maintain consistency in food quality, flavor, and appearance according to established recipes and standards. Support dinner service, room service, banquets, and late-night operations. Ensure all opening, shift, and closing procedures are properly completed. Assist with inventory control, product rotation, and minimizing waste. Team Leadership & Training Lead, train, and support cooks, stewards, and support staff during PM shifts. Assign tasks, monitor performance, and ensure culinary team adheres to policies and procedures. Foster a positive, cooperative, and safe work environment. Communicate shift updates, concerns, and guest feedback to the Executive Chef or Sous Chef. Safety & Sanitation Enforce all food safety, sanitation, and hygiene standards in accordance with Hilton brand guidelines and local health regulations. Ensure proper use, cleaning, and maintenance of kitchen equipment. Monitor safe food handling, storage temperatures, and cleanliness of workstations. Guest Service & Coordination Ensure timely and accurate delivery of food for restaurant, bar, and room service orders. Assist with banquet and catering food preparation when PM events are scheduled. Address guest dietary needs, special requests, or food-related concerns as needed. Qualifications Must have your food handler certification. Prior supervisory experience in a commercial kitchen or hotel culinary environment preferred. Strong cooking skills and knowledge of various kitchen stations. Understanding of food safety, sanitation regulations, and proper kitchen procedures. Ability to lead, train, and motivate kitchen staff. Strong communication and time-management skills. Ability to work evenings, weekends, and holidays as needed. Physical Requirements Ability to stand for extended periods of time. Frequent bending, lifting, carrying, and moving up to 50 lbs. Ability to work in hot, fast-paced kitchen environments. Work Environment Hot kitchen environment with exposure to heat, steam, and noise. Interaction with culinary teams, servers, and banquet staff.
