Full Job Description Job Purpose:
The Director of Food & Beverage is responsible for the overall administration and daily operations of all food and beverage outlets and ensure full compliance with company standards, policies, procedures and all applicable federal, state, local liquor, health, and safety regulations.
Essential Functions:
Excellent internal/external guest service. Responsible for management and administration of all the vital elements of the Food and Beverage Department including training, trade-knowledge, supervision and evaluation of assigned staff and scheduling. Review activities in all restaurants and bar areas to gauge and improve staffing levels, working conditions and other matters which influence quality guest service and profitability. Participates in preparation of budgets for all Food and Beverage Departments. Oversee recommendations and establishment of prices and portions for products and services within approved profit and plan guidelines. Maximize revenues and control costs of Food and Beverage operations. Ensure compliance with federal, state, and local liquor regulations. Administer a process to ensure compliance with established food handling and sanitation requirements and standards. Prepare various cost and operational reports. Investigate and resolve guest complaints and issues. Verify sales reporting, cash handling, and payroll accounting reports. Always ensure effective operations of all Food and Beverage venues. Works closely with the marketing department to coordinate events that include food and beverage. Ensure a safe environment for guests and associates. Understand the goals and vision of the casino and demonstrate commitment to those goals in terms of individual and team performance. Perfom1s other duties and projects as required by management.
Physical Requirements:
Walking, sitting, or standing for long periods of time; occasional bending, squatting, kneeling, stooping; good finger dexterity and feeling; frequent repetitive motions; talking, hearing and visual acuity. Occasional lifting (up to 50 lbs) Be able to reach, bend, and stoop. Ability to organize and coordinate multi tasks. Working Conditions Busy office environment. Typical of that in a busy casino with heavy cigarette smoke accompanied with a variety of competing noises and communications Flexible hours (weekends, nights, holidays) Minimum Qualifications for Consideration Bachelor's degree in Food and Beverage from a four-year College or university; or five plus years related experience and/or training; or equivalent combination of education and progressive work experience. Effective communication skills. Capable of developing approaches for implementing an idea. Working knowledge of laws governing food and liquor handling. Ability to work any shifts, start time, weekends, and holidays. Must be able to obtain Liquor License Must be able to obtain food handlers certification. Documents that establish both Identity and Employment Eligibility.
