Director of Food & Nutrition Services Position Summary:
The supervisory position is responsible for providing technical administrative supervision (through example) for all dietary employees and ensuring a smooth-running operation exemplified by sufficient scheduling, high standards of sanitation, quality food production, effective training of staff, accurate inventories and purchasing methods, cost control, implementation of department policies and procedures, and sound communication with management. Independent judgement and initiative are required
Task Performed:
Responsible for overall supervision of food service areas; hot and cold prep, traylines and dining rooms, storage areas, offices and warewash. Bi-weekly schedule for all food service personnel. Coordinates daily activities and Cook and/or Chef Supervisor as follows: Opening and closing checklist. Sanitation assignments and procedures for all food service and proper sanitation procedures for all areas. Trayline assignments. Warewash assignments. Reviews disciplinary actions. Diet compliance. Follows department policies and procedures for proper methods of production. Quality assurance, i.e., sanitation audits, food quality assessment forms test trays, dishmachine temperature logs, maintenance logs, refrigeration/freezer logs, trayline meetings, supervisor's log, production sheets and hot and cold preparation sheets.

attendance records, timecards, temperature log sheets, etc.

Maintains appropriate record keeping system: attendance records, timecards, temperature log sheets, etc. Assist Manager to ensure accurate on hand inventories are taken for each food Order and ending inventories. Recommends, conducts disciplinary action according to policies. Attends weekly manager's meetings, Conducts daily trayline meetings with staff. Evaluates problems and makes recommendations to Food Service Manager and/or Director. Attends participates, conducts in employee inservices. Orients new employees to the facility. Monitors trayline, dining services and cafeteria for food quality, sanitation , portion sizes, serving times and plate presentations. Participates in service of special functions. Performs other related duties as assigned. May be required to fill in for any open positions through out the day. Physical Demands Ability to lift up to 30 pounds; stand for up to 4 hours at a time. Position Specifications High School graduate or equivalent and a graduate of a state approved food Service supervisor's course. As alternative to the above, an associate degree in food service administration, institutional management or other related education or training in related fields. Two years supervisory experience in a hospital or extended care facility and completing one of the training programs described above. Must be or become Serve Safe certified within 1yr of date of hire and maintain current certification. Fair Acres is regulated by state and federal laws.
