The Server Assistant keeps the floor moving. You are the reason tables get cleared before the next guest is seated, water glasses stay full, and food leaves the pass hot and lands at the right seat. This is a physically demanding, high-volume position on a floor that runs around 285 covers on a busy night, and it is the role the whole service team leans on.
