A Brief Overview The Fine Dining Hospitality Server provides fine-dining service, residential hospitality, room service, and compassionate food and beverage service to Villa Marie Claire hospice patients, patient families and visitors, hotel guests, employees, physicians, board members, donors, visiting clergy, and other guests of Villa Marie Claire Dining and Hospitality Services. The Sever assigned to the Opening Hospitality Shift (7:00 AM - 3:30 PM) opens the dining room each morning, executes breakfast and lunch service, delivers morning room service, and transitions the room in show-ready condition to the Evening team. Service is delivered with grace, dignity, discretion, compassion, and precision, in coordination with the Culinary Team, Nursing, Housekeeping, Facilities, Security, Clergy and Chapel Team, the Dining Reception Host, and other Villa Marie Claire departments. The Sever reports directly to the Maître d', Villa Marie Claire, and works under the indirect oversight of the Administrative Director, Villa Marie Claire. What you will do- Warmly welcome and acknowledge guests and provide attentive, compassionate tableside service, using the guest's last name when known; guide guests through menus, specials, beverages, and available modifications with confidence and conversational fluency.
- Accurately take and enter orders in Square for Restaurants using seat positions and proper course sequencing; immediately communicate food allergies and dietary restrictions verbally to the Chef and Maître d' and document allergy alerts in the POS, recognizing that the POS flag never replaces verbal communication.
- Deliver and announce food and beverages using established fine-dining service techniques, including proper service and clearing positions, ladies-first service, appropriate course sequencing, and safe handling and presentation of hot plates.
- Maintain attentive table service throughout each meal, including two-bite/two-minute quality checks, beverage maintenance, pre-bussing, crumbing, napkin service, clearing, resetting, and re-tooling; reset vacated tables within five minutes and maintain all dining areas in show-ready condition.
- Prepare and deliver room-service trays to residential hospice patients and hotel guests with appropriate clinical precautions and compassionate service standards; coordinate with Nursing regarding dietary orders, swallowing precautions, NPO status, meal timing, and other relevant clinical considerations.
- Present, run, return, and close checks accurately and gracefully; coordinate voids, comps, and payment corrections through the Maître d'; follow the Villa Marie Claire

service-recovery model and promptly escalate guest concerns when appropriate.- Uphold Villa Marie Claire standards for uniform, grooming, professional conduct, confidentiality, discretion, HIPAA compliance, and appropriate behavior within the hospice environment; participate in required briefings, meetings, education, and competency training.
- Actively support fellow Front of House employees using the "full hands in, full hands out" standard and coordinate effectively with the Maître d', Executive Chef and Culinary Team, Nursing, Dining Reception Host, Housekeeping, Facilities, Security, Clergy and Chapel Team, and other Villa Marie Claire departments.
- Open and prepare the Main Dining Room, Balcony, Patio, Kitchen Island, Poolside, and other assigned service areas; ensure all zones are clean, stocked, polished, organized, and show-ready before morning service.
- Prepare morning beverage and service stations, including coffee, tea, hot water, juices, water carafes, bread, and pastry displays; provide pre-breakfast coffee and beverage service to hotel guests, patient families, staff, and clergy as directed.
- Own and execute breakfast service, including greeting and seating guests when Host coverage is unavailable, supporting patient families during morning meals, and preparing and delivering morning room service in coordination with Nursing.
- Transition the dining room from breakfast into lunch service and execute lunch service through the end of the shift, supporting the Dining Reception Host during the lunch arrival period and responding to changing guest and service needs.
- Maintain side stations, the room-service pantry, linen, glassware, silverware, beverages, service supplies, and assigned hospitality areas throughout the shift; complete all required opening, transitional, side-work, stocking, and sanitation responsibilities.
- Conduct a complete handoff to the incoming Evening Server, communicating dining-room status, dietary alerts, VIP visits, family gatherings, special events, open room-service tickets, and outstanding service needs; leave all dining and service areas fully stocked, clean, organized, and show-ready for the Evening team.
- Work under the direction of the Maître d' and indirect oversight of the Administrative Director, Villa Marie Claire, in accordance with departmental and Medical Center policies, and perform other related duties as assigned in support of Villa Marie Claire dining and hospitality operations. - Minimum two (2) years of prior restaurant, hotel, private-club, or hospitality service experience, or equivalent training Fine-dining or private-club experience Healthcare, senior living, hospice, hotel, or residential hospitality experience Knowledge, Skills, and Abilities
- Fine-dining service techniques, table etiquette, course sequencing, and professional tableside service
- Guest relations, compassionate communication, service recovery, and discretion in emotionally sensitive situations
- Food and beverage knowledge, room-service execution, and Square for Restaurants POS operation Licenses and Certifications
