Guest Service & Hospitality Greet each guest promptly, introduce yourself by name, and be prepared to inform guests of all daily specials. Maintain complete knowledge of daily specials, soups, beverages, and other featured items. Provide attentive, professional service and pay close attention to the finer details of the guest experience, including ashtrays, water glasses, replacement flatware, napkins, and other guest needs. Relate all guest comments to a manager, including both positive and negative comments regarding any area of the hotel or restaurant. Menu & Beverage Knowledge Maintain thorough knowledge of all menu items, including ingredients, accompaniments, garnishes, and methods of preparation. Be prepared to answer guest questions about the menu clearly, directly, and accurately. If you are unsure about an item, ask the manager or Executive Chef before providing an answer to the guest. Maintain thorough knowledge of all wines served, including appropriate food pairings, proper timing of service, and correct procedures for recommending, presenting, and serving wine. Attend all scheduled taste panels and sample all items presented to ensure familiarity with the menu. Food & Service Standards Inspect all food before presenting it to a guest. If an item is incorrect, incomplete, or does not meet presentation standards, have the Chef correct it or notify a manager. Never serve an incorrect or unacceptable item to a guest. Remove dirty plates, silverware, and glasses promptly after the entire table has completed each course. Never leave the dining room empty-handed. Whenever possible, carry something back to the appropriate location when leaving a table or service area. All tables must be completely bussed within 4 minutes of the guests leaving. It is the server's responsibility—not the Dining Room Attendant's—to ensure this standard is met for all assigned tables. Clean as you go and maintain a clean, organized, and professional service area throughout the shift. Station & Side Work Check your assigned station at the beginning of each shift to ensure that all tables, chairs, floors, and surrounding areas are properly set and clean. Arrive prepared with all necessary equipment to perform your duties, including a pad of paper, pen, check folder, corkscrew, clean towel, tray, and any other required service tools. Complete all assigned setup, side work, and cleaning duties according to the applicable setup sheets and cleaning schedules. Gratuity & Check Procedures A server may never add a gratuity to a guest check without proper authorization. Any gratuity added to a check must follow the restaurant's established gratuity policy and receive the required guest and/or management authorization before being applied. Servers are responsible for ensuring that all checks are handled accurately and in accordance with restaurant procedures.
