Musashi Japanese Fusion - Frisco, TX About Us Musashi Japanese Fusion is a growing restaurant focused on high-quality Japanese cuisine and a strong guest experience. We are rebuilding our kitchen culture with higher standards, better systems, and accountability—and we're looking for a Sous Chef who can take full ownership of kitchen operations. Position Overview This is not a typical sous chef role. The line cook will be responsible for operations, ordering, inventory, prep execution, and team accountability. You will work closely with ownership and the Head Sushi Chef to ensure consistency, efficiency, and cost control across the entire kitchen. Key Responsibilities Kitchen Operations & Leadership Oversee all back-of-house operations on a daily basis Ensure kitchen is fully prepped and ready before every service Maintain speed, organization, and consistency during service Enforce cleanliness, food safety, and proper kitchen standards Inventory & Ordering (Full Ownership) Manage all kitchen inventory (food, dry goods, sauces, etc.) Place and manage vendor orders (including Japanese ingredients) Conduct weekly physical inventory counts Control food costs, minimize waste, and maintain par levels Food Execution & Quality Control Ensure all dishes are prepared consistently to Musashi standards Maintain proper portioning and plating across all menu items Work alongside sushi team to ensure overall quality of food leaving the kitchen Team Management & Accountability punctuality and discipline Train team members on prep, standards, and efficiency Hold staff accountable—no standing around, always prepping or improving Set the tone for work ethic and urgency Systems & Organization Build and maintain prep lists, cleaning schedules, and kitchen systems Identify inefficiencies and implement improvements Ensure smooth communication between kitchen and front of house Requirements 3+ years of kitchen experience (Japanese cuisine required) Strong understanding of Japanese ingredients, techniques, and kitchen flow Experience with ordering, inventory, and food cost control Proven leadership ability in a fast-paced kitchen Highly organized, detail-oriented, and proactive Reliable and punctual (non-negotiable) Ability to work nights, weekends, and holidays What We're Looking For Someone who can run the kitchen without being told what to do A leader who takes ownership of results—not just tasks High standards for cleanliness, prep, and execution Someone who sees slow time as prep time—not break time Why Join Musashi Opportunity to take full control of kitchen operations Work directly with ownership in rebuilding and growing the business Be part of a team focused on accountability, culture, and long-term success If you're serious about leading a kitchen and not just clocking in, we want to talk.
