The Mission:

Sky Waikiki is evolving. We are shifting toward a premier Sushi, Steak & Seafood Side-By-Side Concept destination, delivering NY-style big cuts (think Lugers) 19 stories above Waikiki Beach. As our Lead Broiler Cook, you are the technical anchor of the kitchen, responsible for executing the perfect sear and internal temp on our American Prime and Premium Choice Grade Striploins, Porterhouses, and Wagyu cuts.

Operational Focus:

Montague Mastery (or comprable brands): Expert operation of our Montague broiler . You must understand how to manage 1800°+ infrared heat to create the signature crust our guests expect.

High-Stakes Precision:

Mastery of "doneness." Nobody is perfect but we strive for perfection with every cut! You ensure every steak is rested perfectly before it hits the pass.

Line Leadership:

You aren't just a cook; you're the "quarterback" of the hot line. You coordinate timing between the broiler, shareable sides, and the raw bar to ensure everything hits the table simultaneously.

Training & Standards:

You will train the line team on broiler safety, maintenance, and the technical nuances of high-heat cooking.

What You Bring:

Steakhouse Pedigree:

Significant experience in high-volume, upscale steakhouses.

Equipment Knowledge:

Technical ability to troubleshoot and maintain specialized broiler equipment.

Consistency:

A "standard-bearer" mindset. You treat every 16oz Striploin like it's the most important dish of the night.

Professionalism:

You lead with energy and stay cool under the pressure of a busy Waikiki service.

Pay:

$24.32 - $29.29 per hour
