Job Title:
Knife Cutters Summary This production position works in a production area processing pork product. Requires working with raw pork products. Usually works five to six days a week; overtime may be required based on production needs. Principal and Essential Duties and Responsibilities. Removing hair from carcasses as the carcass goes through the line Remove any hair after the head has been dropped by the head breaker. Opening area, break the "H" bone by cutting between the two hams and make a straight cut down the brisket. Trim off any defects or contamination on the carcass Rail out carcasses that need to be re-worked. Able to maintain sharp knife through out the day Adheres to all safety requirements Personal Protective Equipment Maintain clean and safe working environment Environmental Factors and Physical Requirements Exposure primarily consists of wet and moist floors which include metal and plastic grating surfaces. May handle product 25 degrees to 50 degrees Fahrenheit. Must wear and use protective and safety equipment required for the job as directed by the Company. Able to stand/walk for several hours. Work may include lifting (up to 50 lbs), reaching, bending, pushing boxes on conveyor assembly
