ABOUT TOUS LES JOURS
Tous les Jours is a French-Asian inspired bakery café dedicated to baking fresh daily using premium ingredients. From signature cloud cakes, mousse cakes, and artisan breads to handcrafted pastries and desserts, we create joyful experiences through beautifully crafted baked goods. We are opening our newest location in McKinney, TX, and are building our founding back-of-house production team.
ABOUT THE ROLE
We are seeking a skilled and motivated Production Lead to oversee our back-of-house operations. You will lead daily baking and cake decorating production, ensure quality and consistency across all products, and support and develop a growing team. Your role may span artisan bread and pastry baking, cake decorating and finishing, or both — and you will be a key part of setting the standard from day one.
Schedule:
Morning and evening shifts available; includes weekends
RESPONSIBILITIES
Lead and coordinate the back-of-house team during production shifts, delegating tasks to meet daily goals Train and mentor team members on recipes, techniques, and quality standards Oversee mixing, scaling, proofing, shaping, and baking of artisan breads, croissants, and pastries Lead assembly, icing, and decoration of cakes including cloud, mousse, and buttercream styles Manage custom cake orders, ensuring accuracy and timely completion Monitor inventory and communicate restocking needs to management Uphold food safety and sanitation standards across the entire team Maintain display cases with fresh, visually appealing products throughout the day
QUALIFICATIONS
Experience in baking, pastry, or cake decorating; prior lead experience preferred Proficient with commercial kitchen equipment including ovens, mixers, proofers, and piping tools Strong attention to detail, able to lead a team while maintaining personal production output Able to lift up to 50 lbs, stand for extended periods, and work in warm kitchen conditions Available for early morning shifts, weekends, and holidays Food Manager certification required prior to start date
