Job Description

Key Results Area:
The Sanitation Supervisor oversees 3rd-shift sanitation operations for Fulton Market's USDA meat and poultry processing facility. This role ensures full compliance with USDA, SQF, GMP, SSOP, and company sanitation standards. The Supervisor directs sanitation employees and 3rd-party sanitation services, executes the Master Sanitation Schedule (MSS), maintains sanitation documentation, and partners closely with Production, FSQA, and Maintenance to ensure the facility is clean, safe, and inspection-ready each day.
Principal Duties and Responsibilities:
Sanitation Operations Lead all nightly sanitation activities on 3rd shift, ensuring compliance with USDA, SQF, GMP, SSOP, and food safety requirements. Execute the Master Sanitation Schedule (MSS) and nightly sanitation plan for equipment, processing rooms, coolers, warehouse areas, and support spaces. Conduct sanitation validations and verifications including ATP testing, visual inspections, allergen clean-outs, and pre-op checks. Maintain complete and accurate sanitation logs, chemical usage records, MSS files, and nightly verification documentation. Identify sanitation deficiencies and support root-cause analysis for sanitation-related deviations. Coordinate with Production to ensure smooth transition to daily USDA inspection and start-up readiness. Food Safety Programs Perform daily pre-op sanitation inspections and document findings. Support USDA regulatory compliance and assist FSQA leadership during USDA and SQF inspections. Verify accuracy and completeness of sanitation-related QA and production documents. Quality Assurance Support (Sanitation-focused integration with QA functions) Ensure compliance with SSOPs, allergen control procedures, and sanitation-related preventive controls. Assist QA Technicians with sanitation corrective actions and verify completion. Support product hold, release, and rework activities when sanitation issues are involved. Documentation & Reporting Maintain sanitation files, deviation logs, verification records, and corrective action documentation as required by SQF. Prepare sanitation summaries, ATP trends, and corrective action updates for review by FSQA leadership. Assist during internal and external audits by providing sanitation documentation and inspection readiness materials. Cross-Functional Collaboration Partner with Production, Warehouse, and Maintenance to address equipment cleanliness, sanitation needs, and any issues affecting food safety. Communicate sanitation findings, trends, and corrective actions to supervisors and FSQA leadership. Support continuous improvement initiatives focused on sanitation efficiency and food safety culture. Training & Leadership Train sanitation team members on chemical handling, PPE, Lockout/Tagout, sanitation procedures, and proper cleaning/sanitizing methods. Lead and mentor sanitation employees, reinforcing accountability, consistency, and compliance. Support hiring, onboarding, and skill development for sanitation team members in partnership with HR and FSQA. Participate in delivering sanitation-focused training programs emphasizing USDA, SQF, GMP, and environmental monitoring expectations. Quality & Compliance Collaboration Collaborate with FSQA leadership and USDA Inspectors to maintain regulatory compliance and audit readiness. Assist with sanitation documentation verification, traceability requests, and compliance reviews during investigations. Work closely with Production and Warehouse teams to ensure the facility remains in continuous inspection-ready condition. Scope of Role Supervises 3rd-shift sanitation staff and oversees performance, task assignment, attendance, and safety. Ensures proper sanitation coverage across production rooms, poultry/red meat processing areas, warehouse, and shared facilities. Responsible for correct execution of MSS tasks, pre-op readiness, sanitation documentation, chemical controls, and sanitation verification activities. Oversees work performed by 3rd-party sanitation companies and ensures their compliance with standards.
Working Relationships Reports to:
FSQA Director Works closely with: FSQA, Production, Warehouse, Maintenance, QA Technicians, and USDA Inspectors Maintains daily communication with cross-functional partners and sanitation crew to support compliance and operational efficiency.
Physical Demands:
  • Ability to work in cold (32-40°F), wet, and humid production environments.
  • Standing and walking for extended periods.
  • Occasional lifting up to 50 lbs.
  • Ability to safely wear PPE including waterproof gear, gloves, boots, eye protection, and hearing protection.
  • Ladder and stair use as required.
Qualifications Required:
  • 2 years of experience as a Sanitation Supervisor - Required.
  • 5 years in food, beverage, or high-risk manufacturing - Required.
  • Working knowledge of USDA regulations, HACCP, GMP, SSOPs, and sanitation programs.
  • Experience supervising sanitation teams and coordinating activities with Production, FSQA, and Maintenance.
  • Proficiency in Microsoft Office and sanitation/QA documentation systems; ERP/WMS experience preferred.
  • Ability to work effectively on 3rd shift in a fast-paced, cold, wet environment.
  • Science degree preferred (Food Science, Microbiology, Public Health, Biology, Chemistry).
  • Bilingual (English/Spanish) preferred.
Skills and Certifications:
  • Strong leadership and team development experience in sanitation or QA environments.
  • High attention to detail and strong documentation discipline.
  • Knowledge of HACCP, GMPs, SSOPs, chemical handling, hygienic design, sanitation best practices, and environmental monitoring.
  • Strong communication, coaching, and cross-department problem-solving abilities.
  • Skilled in RCA, CAPA, and identifying sanitation and hygienic design risks.
  • Excellent organization and time management, especially during audits or pre-op verification.
  • Ability to train employees in sanitation techniques, safety, and compliance requirements.
  • Preferred certifications:
HACCP, PCQI, SQF
Practitioner, or equivalent food safety training.
Pay:
$65,000.00 - $85,000.00 per year
