About Firenze Firenze is a growing Italian fast-casual food company focused on making craveable food the right way. We care deeply about ingredient quality, operational excellence, consistency, and building systems that scale intelligently. Over the past several years, we have built a highly sophisticated operational infrastructure inside custom spreadsheets and operational models that power large parts of the business today, including: Sales forecasting Dynamic prep batching Ingredient yield systems Shelf-life modeling Throughput and assembly-line timing Catering production systems Operational reporting and decision-making tools We are looking for someone highly analytical, quantitatively minded, and deeply systems-oriented to help scale and extend this operational infrastructure as the company grows. This is a very math-heavy, spreadsheet-intensive, systems-driven role. The right person will spend a significant amount of time working directly inside Excel and Google Sheets building models, refining logic, improving workflows, organizing operational data, and solving quantitative operational problems. This is not a traditional restaurant manager role. What This Role Actually Is This role sits at the intersection of: Advanced spreadsheet modeling Operational systems design Quantitative operational analysis Workflow architecture Forecasting and operational math Process optimization Inventory and food cost analytics Labor modeling Timing and throughput analysis Restaurant365 integration Operational finance and FP&A infrastructure You should genuinely enjoy: Spreadsheets Structured thinking Quantitative problem-solving Building systems Organizing complexity Operational logic Process optimization Modeling real-world operations mathematically What You'll Work On Advanced Spreadsheet Systems + Operational Modeling Extend and improve sophisticated spreadsheet-based operational systems already used throughout the business Build and refine forecasting models tied to projected sales and operational demand Improve prep batching systems tied to yields, shelf life, and production timing Build scalable operational logic across multiple units Develop increasingly sophisticated operational reporting infrastructure Organize large operational datasets into usable decision-making systems This role will involve extensive daily work inside: Excel Google Sheets Operational models Reporting systems Structured operational data Quantitative Operations + Process Optimization Analyze operational workflows and identify inefficiencies mathematically Build systems that improve throughput, consistency, labor efficiency, and prep accuracy Model operational timing and production flow Improve forecasting accuracy using operational and historical sales data Translate real-world operational problems into scalable systems and workflows Examples of problems this role may work on: How prep batching should change based on forecasted demand Modeling food throughput during peak periods Labor optimization by hour/daypart Shelf-life driven production planning Multi-unit operational consistency systems Forecast variance analysis Food cost variance tracking Production timing optimization Reporting + Analytics Infrastructure Build and maintain operational reporting around: Labor Food cost Inventory Throughput Prep efficiency Catering operations Profitability Multi-unit performance Help leadership identify operational trends and inefficiencies through data analysis Build reporting systems that scale as the company grows Systems + Restaurant365 Integration Help connect Restaurant365 with custom operational spreadsheets and reporting systems Improve operational visibility across inventory, purchasing, prep, labor, and accounting Structure operational and financial data into scalable reporting frameworks Operations Finance + FP&A Development Support operational P&L reporting and financial visibility Build labor modeling and operational cost analysis tools Help develop long-term operational finance and FP&A infrastructure as Firenze scales into a multi-unit business Ideal Candidate We are looking for someone who: Loves spreadsheets, systems, modeling, and structured problem-solving Is highly quantitative and analytically rigorous Naturally thinks in workflows, systems, timing, logic, and optimization Is extremely comfortable navigating and extending complex spreadsheet systems Enjoys operational math and quantitative decision-making Can break down messy operational problems into scalable systems Is highly detail-oriented and organized Learns quickly and adapts fast Wants meaningful ownership and responsibility This role is likely a strong fit for candidates with backgrounds in: FP&A Operational finance Consulting Investment banking Business analytics Supply chain analytics Industrial engineering Advanced operational modeling High-level spreadsheet-based operations work Restaurant experience is helpful but not required if analytical and systems capabilities are exceptionally strong. What Success Looks Like Cleaner and more scalable operational systems More accurate forecasting and prep planning Better operational visibility and reporting Lower food waste and tighter inventory control Better labor efficiency Faster and more consistent operational execution Stronger operational decision-making through analytics Replicable systems that scale across multiple locations Compensation $80,000-$90,000 base salary. Health, dental, vision included. Performance-based bonus tied to operational impact and systems development Significant long-term growth opportunity as the company scales No equity component.
