Meat Production Manager - Paul's Gourmet JerkyJob Overview Paul's Gourmet Jerky is seeking a dependable and experienced Meat Production Manager to oversee daily meat processing operations. This position is responsible for managing all aspects of jerky and meat stick production, ensuring USDA compliance, maintaining inventory levels, and coordinating weekly production schedules. The ideal candidate is organized, hands-on, detail-oriented, and comfortable working in a fast-paced food production environment.

Responsibilities:

Meat Processing & Production Cut and trim meat for jerky and meat stick production Prepare recipes and seasoning blends Tumble and marinate products Rack products for cooking and drying Monitor and manage cooks/smokehouse operations Assist with packaging when needed Maintain consistency and quality standards throughout production USDA Compliance & Documentation Complete and maintain all USDA-required paperwork Ensure food safety and sanitation standards are met daily Maintain proper production logs and records Assist with audits and inspections as needed Inventory & Ordering Track inventory levels of meat, seasonings, casings, packaging materials, and supplies Coordinate ordering of products and materials Plan weekly production schedules based on inventory and sales needs Communicate production needs with management Cleaning & Facility Maintenance Maintain a clean and sanitary production environment Oversee daily cleanup of equipment and workspaces Ensure proper handling and storage of products Qualifications Experience in meat processing or food production preferred Knowledge of USDA regulations and food safety standards preferred Ability to lift 50+ pounds and work in a production environment Strong organizational and communication skills Ability to manage multiple tasks and production timelines Dependable and team-oriented attitude Schedule Full-time Occasional over time Compensation Pay based on experience About Us Paul's Gourmet Jerky is a family-owned Michigan company producing high-quality jerky and meat snacks.
