Job Description
POSITION SUMMARY
This position is responsible for complying with all safety work rules at all times and reinforcing Safety as a Core Value. It ensures that all policies, procedures, and activities related to Food Safety and Quality are consistently followed in order to reduce product and process variability. Employees, customers, and consumers benefit from the work performed in the mixer and tanker bay by receiving a safe, high‑quality, great‑tasting product in a timely manner. This position must follow all company and USDA standards and ensure that all tankers and vessels are properly monitored and documented to meet those standards. The purpose of this role is to direct the proper flow of liquid egg to the holding tanks and ensure the correct mix of egg product and ingredients according to customer formulas and specifications. This position transfers all edible liquid egg that meets USDA and Company specifications for final distribution. Responsibilities include monitoring and documenting all tanks and tankers, ensuring all vessels are cleaned and sanitized, following proper procedures, and maintaining accurate records. This position is also cross‑trained in the duties of the inedible tanker bay, including the proper removal of shells and inedible product.DUTIES AND RESPONSIBILITIES
As Mixer:
Set up the mixing room after USDA inspections and obtain the correct formulation of liquid egg product and ingredients using pre‑determined company‑approved procedures (ZBAT). Coordinate with USDA on all tanker cleaning and liquid egg transfers for shipment. Remove outer packaging from ingredient bags and pour ingredients into the appropriate container, recording new lot numbers to meet USDA and Quality Assurance requirements. Record appropriate lot numbers, pH, egg solids, and egg pounds on batch sheets and egg usage forms, along with any other required documentation. Maintain scales and meters to ensure precise and accurate readings. Assist with general housekeeping of the area. Determine whether product meets customer specifications and take corrective action when necessary. Maintain thorough knowledge of the Clean‑in‑Place (CIP) system and use it appropriately to wash lines and tankers. Maintain thorough knowledge of and ability to operate the pasteurizer. Adhere to safe work practices, follow GMP and HACCP guidelines, maintain sanitary conditions, and ensure product quality to support SQF Level 3 certification. Report any conditions that may affect food safety, food quality, or personnel safety. Ensure a safe and healthy workplace by following all safety policies and procedures. Follow Quality work practices, maintain sanitary conditions, and report any concerns affecting food safety or quality. Perform other duties as assigned.As Edible Tanker Bay Person:
Review and verify paperwork accompanying each tanker. Document on theTanker Receiving Log:
date received, product type, raw or pasteurized status, USDA certificate number, receiving personnel, supplier company, and total pounds received. Inspect the physical condition of incoming tankers for cleanliness, temperature, and odor, and take corrective action as needed. Collect samples and deliver them to the lab for testing. Control the flow of egg via the computer panel, flow boards, and piping in both the old and new raw silo areas. Set up transfers by attaching a sanitized unloading hose to the tanker and unloading product into the correct silo or tank. Ensure empty tanks and tankers are cleaned using the Clean‑in‑Place (CIP) system. Communicate all edible egg transfers with the Cooked Department. Mix liquid egg product with ingredients as required. Assist in coordinating tanker shipments. Control the bulk receiving of chemicals. Maintain general housekeeping of the area. Control the flow of inedible egg product to the inedible tanker bay. Assist in other areas as needed, including mixing room duties.EDUCATION AND EXPERIENCE REQUIRED
High school diploma, GED, or equivalent. Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence, and to speak effectively before groups, customers/vendors, or employees of the organization. Ability to add, subtract, multiply, and divide in all units of measure using whole numbers, fractions, and decimals. Ability to compute rate, ratio, and percent, and to draw and interpret bar graphs. Ability to apply common-sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to solve problems involving several concrete variables in standardized situations. Powered Industrial Truck (PIT) Certification. Valid driver's license.PREFERRED EDUCATION, EXPERIENCE, AND SKILLS
Approximately 1 year of experience in the Breaking Department with cross‑training in the tanker bay area under close supervision. Knowledge of production flow, mixing, USDA and Company standards, the CIP system, and tanker bay operations. Strong mechanical ability. Good reading and writing skills with the ability to follow written and verbal instructions. Strong attention to detail. Ability to work well with others and communicate effectively. Good written and verbal communication skills. Basic computer knowledge. Mechanical background with knowledge of pumps and valves, with 6-12 months of related experience. Ability to work independently, learn quickly, and stay self‑motivated. Ability to follow established procedure instructions. Ability to occasionally lift up to 80 lbs safely. Ability to obtain Powered Industrial Truck (PIT) certification. Ability to work indoors in a changing environment for the duration of the shift. Ability to work in a wet environment with fluctuating temperatures, both indoors and outdoors. Ability to lift up to 50 lbs safely. Ability to follow Lockout/Tagout (LOTO) and Confined Space Entry procedures. Ability to work safely with chemicals. Ability to follow all Good Manufacturing Practices (GMPs) and Safety regulations and wear the proper Personal Protective Equipment (PPE) required for the area. Ability to climb onto tankers using a safety harness. Ability to learn Lockout/Tagout and Confined Space procedures. Ability to operate specific equipment or tools as required.
