Job Description

Overview We are seeking a dynamic and innovative Bakery Formula Creator / Food Scientist to join our passionate team dedicated to advancing bakery product development. In this role, you will lead the formulation and optimization of bakery recipes, ensuring they meet the highest standards of quality, safety, and consumer appeal. Your expertise will drive the development of new products and improve existing offerings, aligning with industry regulations and market trends. Responsibilities Develop, test, and refine bakery formulas that align with product specifications, nutritional standards, and consumer preferences. Conduct laboratory experiments to evaluate ingredient interactions, processing techniques, and product stability. Ensure all formulations comply with FDA regulations, GFSI standards, HACCP protocols, and other food safety requirements. Collaborate with manufacturing teams to scale recipes from concept to production while maintaining quality assurance and consistency. Collect and analyze data on ingredient performance, process efficiency, and product quality to support continuous improvement initiatives. Perform microbiological testing and biochemistry analyses to verify product safety and shelf life stability. Lead root cause analysis for any quality issues or deviations, implementing corrective actions as part of a robust quality management system. Support research & development efforts by exploring innovative ingredients, packaging solutions, and processing methods that enhance product appeal and safety. Experience Proven laboratory experience in food science or related fields within the food industry, especially bakery or food processing sectors. Strong understanding of manufacturing processes, GMP (Good Manufacturing Practices), CGMP (Current Good Manufacturing Practices), HARPC (Hazard Analysis & Risk-Based Preventive Controls), and sanitation protocols. Familiarity with FDA regulations, HACCP plans, GFSI standards, and food safety systems such as SQF or BRC. Expertise in microbiology, biochemistry, nutrition science, and analysis skills relevant to food product development. Experience in data collection, scientific research methodologies, root cause analysis, and applying continuous improvement strategies. Knowledge of packaging considerations for bakery products and their impact on shelf life and safety. Ability to communicate technical information clearly across cross-functional teams while maintaining meticulous documentation of experiments and results.
