Duties :
Provide sustainable scientific application development with focus on the baking industry; provide high-level technical support during new product developments and support the technical validation of prioritized regional sales activities; provide high level technical results through execution of well-designed laboratory baking trials; manage the North American Baking Lab; strengthen internal application know-how and product portfolio development; provide creative and effective technical support to key customers and high-potential projects; work closely with Sales, Marketing and R D to deliver technical input for relevant industrial applications and growth opportunities; contribute as an active member of a global team of technical experts; and manage a small team of food scientists. Up to 40% domestic and international travel is required.

Requirements :
Bachelors degree (3 year degree accepted) in Food Science, Chemistry, Biochemistry, Biology or related field plus 3 years of experience.
Experience must include the following:
Bakery ingredient functionality, including flour types, leavening agents, emulsifiers, and enzymes Dough rheology, fermentation, and baking processes across various product types, including bread, cakes, pastries, pasta, and cookies; FDA and USDA regulations specific to baked goods: Implementing HACCP, GMP, and allergen control programs in bakery operations; Conducting and interpreting sensory evaluations, texture analysis, and moisture content testing; Using lab equipment for bakery-specific testing, including farinograph, alveograph, texture analyzers and moisture analyzers; Working with and supporting technical support, customers and sales teams, as well as communicating with technical and non-technical stakeholders; Expertise in preparing and testing various dough types (yeasted, laminated, enriched, sourdough) for commercial and industrial applications; Educating internal teams and customers on baking technologies, application techniques, and ingredient usage; Translating technical information into customer-friendly language; building trust with clients and stakeholders; Delivering hands-on baking demonstrations and presentations to customers, sales teams, or industry partners; Working directly with clients (bakeries, manufacturers) to solve technical issues, implement new products, and optimize formulations; Managing multiple development projects simultaneously, ensuring timely delivery, testing, and customer approval; Experience with scaling up from lab to plant; adjusting for mixing time, proofing conditions, and baking parameters; Writing technical reports, test protocols, product specifications, and customer-facing documentation.
