Job Description

Position Summary VITA Italian Restaurant is seeking an experienced Catering & Restaurant Manager to join our management team in Pomona, California. This role is responsible for overseeing daily restaurant operations while managing catering and banquet events within a full-service hotel environment. The ideal candidate brings strong leadership, operational discipline, and creativity, with proven experience in hotel banquets, Italian cuisine service, and catering operations. Skills & Requirements Required Experience Minimum 5 years of experience in a similar management position within a full-service hotel Minimum 2 years of experience in Italian restaurant and catering management Minimum 3 years of Hotel Banquet Management experience (Required) Minimum 3 years of Restaurant & Catering Management experience (Required) Technical & Operational Knowledge Thorough knowledge of MICROS , Delphi , banquet operations, AV coordination, wine and liquor service Strong understanding of food & beverage cost control, inventory management, and labor efficiency Ability to establish and enforce quality and quantity control standards Creative ability in setting service standards, presentation, and guest experience Professional Competencies Resourceful, adaptable, and able to maintain flexibility in a fast-paced environment Strong communication and interpersonal skills Ability to maintain excellent working relationships with staff, hotel leadership, and corporate management Professional judgment in handling guest and staff concerns Specific Responsibilities Operational & Administrative Management Prepare daily and submit required operational paperwork, including but not limited to: Staff schedules and labor forecasts Payroll and employee time/edit sheets Catering and room charge postings Operating reports as required by management Maintain accurate department attendance records and training documentation Catering, Banquet & Event Coordination Coordinate daily with Food & Beverage outlets, Catering & Sales, Accounting, and other hotel departments Attend and actively participate in BEO meetings, Resume meetings, and Staff meetings Plan, forecast, and coordinate all resources required for banquet and catering events, including: Staffing needs Equipment and operating supplies AV requirements Approved rentals and vendor coordination Ensure timely arrival, proper setup, and operational readiness for all events Financial Control & Compliance Enforce all food and beverage control procedures Conduct and/or participate in: Monthly F&B inventories Banquet bar consumption reports Employee bank safekeeping and proper usage Ensure compliance with company policies, hotel standards, and applicable regulations Guest Service & Team Leadership Respond courteously and professionally to resolve guest and staff issues Communicate and escalate issues appropriately through the Restaurant GM, HR, and Hotel GM as needed Lead by example to promote professionalism, accountability, and service excellence Maintain a clean, safe, and organized work environment at all times Scheduling & Availability Work flexible schedules including AM, PM, weekends, and holidays , as required by business needs and directed by management Work Environment & Expectations Fast-paced, service-driven hotel and restaurant environment Requires strong multitasking, leadership presence, and decision-making skills Hands-on role requiring active floor management during service and events
