Responsible for day-to-day banquet culinary operations, including: Menu execution: Collaborating with the executive or head chef to execute banquet menus, special event menus, and customized dishes based on client needs Food preparation: Preparing and cooking high-quality banquet dishes in large volumes while maintaining consistency and presentation standards Food purchasing: Assisting with ordering food and supplies and helping determine inventory needs for events and functions Quality standards: Ensuring all banquet food meets established quality, taste, and presentation standards Kitchen management: Supervising banquet kitchen staff, including line cooks, prep cooks, and temporary event staff during service
Sanitation:
Ensuring the banquet kitchen complies with sanitation standards and overseeing proper food storage and stocking procedures Health and safety: Maintaining compliance with health and safety regulations during food preparation and service
Training:
Training and mentoring kitchen staff on banquet procedures, plating, timing, and service execution
