Job Description

Job Overview:
Park & Elm is seeking a reliable and detail-oriented Bread Baker to join our artisan bakery team. This position is ideal for someone with foundational professional culinary experience—such as a line cook, prep cook, or pastry assistant—who wants to transition into or expand their knowledge of professional bread baking. While prior experience handling commercial dough is a major plus, we are fully willing to train the right candidate who already understands the pace, discipline, and standards of a professional kitchen environment. Key Responsibilities:
Dough Production & Management:
Accurately scale, mix, and monitor dough fermentation and proofing stages according to established recipes.
Shaping & Moulding:
Learn and master hand-shaping techniques for a variety of artisan breads, including ciabatta, focaccia, and specialty loaves.
Oven Operations:
Safely operate, load, and unload a commercial deck oven, monitoring bake times to ensure perfect crust and crumb development.
Kitchen Efficiency:
Maintain a clean, organized workstation and manage prep timelines effectively to ensure smooth daily production.
Food Safety Compliance:
Adhere strictly to health department regulations, food safety standards, and kitchen sanitation protocols.
Qualifications & Skills Experience:
1-2 years of experience working in a professional kitchen, restaurant, café, or catering environment is highly preferred.
Trainability:
A strong desire to learn the specific science of flour, water, yeast, and time. We will provide the training if you bring the foundational kitchen skills.
Kitchen Awareness:
Familiarity with commercial kitchen equipment, safety procedures, and food rotation (FIFO).
Physical Stamina:
Ability to stand for long periods, perform repetitive hand/arm motions (kneading/shaping), and lift heavy bags of flour (up to 50 lbs).
Reliability:
A track record of punctuality, especially for early morning production shifts (e.g., 3:00 AM or 4:00 AM starts).
Certification:
Food Handler's Card or ServSafe certification is a plus.
