Job Description

Position Overview Wylder Windham is seeking a talented, organized, and passionate Pastry Chef to lead the pastry and baking program for Babblers Bakery and the hotel's Food & Beverage operations . We are looking for a dedicated, passionate, and skilled person to become a part of team for our Babbler's Bakery . Our four-season resort will offer 110 hotel rooms, 1 restaurant, 1 Bakery with 20 acres of land alongside the Batavia Kill River, our family-friendly, all-season resort is filled with endless opportunities. The Pastry Chef is responsible for the preparation, production, presentation, and overall quality of pastries, baked goods, desserts, and specialty items served throughout the property. This position requires a strong balance of creativity, consistency, organization, leadership, and hands-on production. As a member of the Food & Beverage leadership team, the Pastry Chef is expected to lead by example, maintain high standards of cleanliness and food safety, effectively manage production and inventory, and create products that reflect the approachable yet special character of Babblers and Wylder Windham. Essential Duties & Responsibilities Oversee daily pastry and bakery production for Babblers Bakery, the restaurant, weddings, events, and other hotel Food & Beverage operations. Prepare and execute pastries, breads, desserts, cakes, cookies, and seasonal specialty items according to established recipes and presentation standards. Develop creative seasonal offerings that complement the Babblers and Wylder brand. Maintain consistency in taste, quality, portioning, presentation, and availability. Establish and maintain production schedules based on business levels, events, occupancy, and anticipated demand. Ensure the bakery and all pastry production areas are properly opened, maintained, cleaned, sanitized, and closed each day. Maintain appropriate inventory and par levels while minimizing waste and unnecessary food costs. Properly receive, label, date, rotate, store, and account for all ingredients and finished products. Monitor product quality and freshness and immediately address items that do not meet standards. Assist with ordering and communicate anticipated product and supply needs to management. Follow all established recipes, food safety procedures, sanitation standards, and allergen protocols. Maintain clean and organized refrigerators, freezers, storage areas, equipment, pastry cases, and production spaces. Ensure all equipment is properly used, cleaned, maintained, and reported to management when repairs are needed. Train, supervise, and provide direction to bakery and pastry team members. Delegate daily responsibilities and follow up to ensure tasks are completed thoroughly and on time. Maintain professional and respectful communication with employees, managers, vendors, and guests. Collaborate with the culinary, restaurant, events, and hotel leadership teams on menus, weddings, special events, holidays, and property activations. Support the operation during high-volume periods and perform hands-on production as necessary. Monitor labor and scheduling needs based on business demand while operating within established budgets. Demonstrate flexibility in scheduling, including early mornings, weekends, holidays, and special events. Leadership Expectations The Pastry Chef is a leadership position and is expected to consistently demonstrate professionalism, accountability, and a positive attitude. This includes setting the standard for the team by arriving prepared and on time, following all company policies and procedures, maintaining a clean and organized workspace, communicating respectfully, taking ownership of departmental responsibilities, and remaining solutions-oriented during challenging or high-volume periods. The Pastry Chef is responsible for ensuring that established standards are followed consistently—not only by themselves, but by all employees working within the bakery and pastry operation. Qualifications Previous professional pastry, baking, or culinary experience required. Previous supervisory or leadership experience strongly preferred. Strong knowledge of pastry and baking techniques, production planning, sanitation, and food safety. Ability to maintain consistency while producing items in volume. Strong organizational and time-management skills. Ability to effectively prioritize multiple responsibilities in a fast-paced hospitality environment. Strong attention to detail and commitment to presentation and product quality. Ability to communicate professionally and work collaboratively across departments. Knowledge of food costs, inventory management, ordering, and waste reduction preferred. Ability to work independently while also functioning as part of a larger Food & Beverage team. Must be available to work early mornings, weekends, holidays, and special events based on business needs. Physical Requirements Ability to stand and work for extended periods. Ability to lift and carry up to 50 pounds. Ability to safely operate commercial bakery and kitchen equipment. Ability to work in environments involving heat, refrigeration, and varying temperatures.
