In this role, you will craft authentic Italian baked goods and artisanal products, bringing traditional recipes to life with precision and creativity. Your expertise will contribute to delivering exceptional quality and flavor, delighting customers who seek genuine Italian bakery experiences. Duties Artisan Bread & Pastry Production Prepare and bake handcrafted Italian breads, focaccia, pastries, desserts, and seasonal specialties. Shape, score, proof, and bake products using traditional artisan techniques. Dough & Fermentation Management Prepare and manage sourdough starters and preferments. Monitor hydration, fermentation, proofing, and dough development. Produce consistent, high-quality baked goods every day. Production & Quality Follow The Italian Apron's signature recipes and production standards. Monitor baking times, temperatures, and finished product quality. Maintain attractive presentation and proper product labeling. Ingredient & Inventory Management Properly handle and store premium ingredients. Rotate inventory and communicate ingredient needs to management. Assist with receiving and organizing bakery supplies. Cleanliness & Food Safety Maintain a clean, organized, and sanitary bakery. Follow ServSafe and health department regulations. Properly clean and maintain mixers, ovens, sheeters, and bakery equipment. Team Collaboration Work closely with the Culinary Manager and production team. Assist with special orders, catering, and seasonal product development. Contribute ideas for new bakery items while maintaining authentic Italian traditions. Shape, score, proof, and bake products using traditional artisan techniques. Qualifications We're looking for someone who has: 2+ years of artisan or scratch baking experience Experience working with fermentation and naturally leavened doughs Knowledge of hydration, proofing, and traditional baking techniques Experience operating commercial bakery equipment Strong organizational and time-management skills A passion for artisan baking and continuous learning The ability to stand for extended periods and lift up to 50 lbs.
