Job Overview & Responsibilities Fabrication & Trimming:
Cutting whole hog carcasses, pork shoulders, or loins into standardized primal cuts and retail-ready portions. This involves precise trimming to minimize waste and meet company quality standards.
Equipment Operation:
Safely operating mechanical tools, including straight knives, wizard/mechanical knives, band saws, and meat grinders.
Packaging & Weighing:
Weighing, wrapping, and boxing prepared meat cuts, and assembling containers for wholesale or retail shipment.
Sanitation & Safety:
Maintaining strict compliance with food safety regulations, cleaning tools (knives, scales), and keeping the cold-room production floor clean.
Core Requirements Physical Stamina:
