Job Description
Grill Cook / Butcher The Black Cypress is looking for a passionate, skilled Grill Cook / Butcher to join our culinary team in Pullman, WA. The Black Cypress is an award-recognized restaurant known for seasonal cuisine, Mediterranean influences, and an unwavering commitment to quality. We are building a team of professionals who take pride in craftsmanship, consistency, and hospitality. What You'll Do Butcher and fabricate whole cuts of beef, pork, lamb, poultry, and seafood. Prepare and portion proteins to exact specifications while minimizing waste. Execute grill station during service with consistency, speed, and precision. Cook steaks, chops, seafood, and other proteins to proper temperatures and presentation standards. Maintain a clean, organized, and food-safe workstation. Rotate inventory and properly store all products. Work closely with the Executive Chef and kitchen team to maintain quality and consistency. Assist with prep and other stations as needed. We're Looking For Someone Who Has previous experience working a high-volume grill station. Has butchery or meat fabrication experience (preferred). Understands proper knife skills and food safety practices. Takes pride in organization, cleanliness, and attention to detail. Thrives in a fast-paced, team-oriented kitchen. Can remain calm under pressure while maintaining exceptional quality. Is dependable, punctual, and eager to continue learning. Qualifications 2+ years of professional kitchen experience preferred. Experience with meat fabrication is a strong plus. Ability to lift up to 50 pounds and stand for extended periods. Nights, weekends, and holidays are required.
